Description

We’re looking for a talented, ambitious Sous Chef to join the kitchen team at The Talbot in Brockley, SE London, and it's new restaurant concept - brock - in our upstairs dining room.

The Talbot is a neighbourhood pub at the heart of its local community, where great food, warm hospitality and a welcoming atmosphere go hand in hand. We believe a brilliant pub should offer more than a great pint - it should serve food that people love, deliver consistently high standards and give guests a reason to keep coming back.

We're looking for a sous chef who shares that mindset: someone who takes pride in their cooking, enjoys working as part of a team and wants to play a key role in building a kitchen that delivers great food every day.

The Role

Working closely with our Head Chef, you’ll be an important part of the day-to-day running of the kitchen, helping us deliver consistently excellent food while maintaining the standards, organisation and culture we expect.

You’ll be responsible for:

  • Supporting the Head Chef with the daily running of the kitchen

  • Leading services and maintaining consistency when the Head Chef is away

  • Preparing and delivering fresh, seasonal food to a high standard

  • Helping develop dishes, specials and seasonal menu changes

  • Working with produce from our kitchen garden and local suppliers

  • Maintaining excellent food safety, cleanliness and kitchen organisation

  • Supporting stock control, ordering, portion control and reducing waste

  • Helping us achieve strong food GP while never compromising quality

  • Training, developing and motivating the kitchen team

  • Creating a positive, professional kitchen environment

  • Taking real ownership of standards and the guest experience

We’re looking for someone who is:

A proper cook. Someone who cares about ingredients, seasoning, presentation and the details that make good food great.

Consistent. Busy Saturday night or quiet Tuesday lunch, the standard should always be the same.

Organised. You understand that a great service starts long before the first ticket arrives.

A team player. No egos. We want someone who supports the people around them and helps create a kitchen people enjoy working in.

Ambitious. This could be a brilliant opportunity for an experienced Sous Chef or a strong Junior Sous ready to take the next step.

Commercially aware. You understand GP, waste, portion control, labour and the importance of running a successful kitchen as well as a creative one.

What We Offer

  • Competitive salary

  • Fresh, seasonal menus

  • Genuine input into dishes and menu development

  • A supportive independent pub company

  • Opportunities to develop and progress within the business

  • Staff food and company benefits

  • A kitchen where quality, consistency and hospitality come first

The Talbot is part of the Little & Large Pub Company.

We believe brilliant pubs are built on great people, warm hospitality and attention to detail.

It’s the little things that make the large difference.

If you’re a Sous Chef who wants to cook great food, lead from the front and be part of an ambitious independent pub business, we’d love to hear from you.
