Sous Chef

THE CUBE, Canary Wharf  

Role Description 

Working in the Kitchen team, you are responsible for the delivery of a high-class food service. You will work as part of our double kitchen, supporting THE BUTCHER and TONI LOCO, to serve food to customers throughout their CUBE journey.  

 Essential Duties and Responsibilities 

  • Leading top quality food service to complement the customer experience. 
  • Prepare and cook dishes, from main courses to sliders and sharing platters. 
  • Ensure food is always delivered on time and to a high standard. 
  • Leading the kitchen team on shift, ensuring staff follow directions.   
  • Helping to organise shifts and rotas for staff with fairness and sufficient time to plan. 
  • Escalating any issues to the correct superior staff. 
  • Monitor and rotate stock to reduce wastage.  
  • Maintain a clean and presentable service area at all times. 
  • Assist in setting up; stocking sauces and prepping ingredients.  
  • Helping to close the kitchen, deep cleaning the area and putting away all tools. 
  • Support the Head Chef with admin duties. 
  • Deputise in the absence of the Head Chef. 

 Other Duties and Responsibilities 

  • Ensure all kitchen training is completed and documented in a timely manner.
  • Proactively contribute to and suggest ways of improving company procedures.  
  • Implement new processes as directed by the senior team. 
  • Onboarding and training new members of the team.   

Skills 

Technical 

  • 5 years of Kitchen / Cooking experience.  
  • Experience leading large teams including back-office responsibilities.  
  • High volume kitchen operation experience.  
  • Experience opening and closing the kitchen area. 

Personal  

  • Flexibility to work regular evenings and weekends.  
  • Positive, ‘Can do’ attitude, picking up any additional responsibilities to help the wider team. 
  • A keen eye for detail, never compromising on standards and keen to deliver an amazing service. 
  • Ability to think on your feet and adapt.  
  • Making suggestions for improvements.  
  • Clear and confident communication, with excellent verbal and written English.
