Los Mochis City is seeking an exceptional Sushi Chef de Partie to join our world-class kitchen team. Located on the rooftop of 100 Liverpool Street, our flagship venue offers a stunning 14,000 sq ft dining space with a 3,000 sq ft terrace overlooking the City skyline.

As a Sushi Chef de Partie, you will play a vital role in delivering exquisitely crafted sushi and sashimi, ensuring every dish meets the highest standards of flavour, texture, and presentation.

The Role

As Sushi Chef de Partie, you will work closely with the Head Sushi Chef and wider kitchen team to produce beautifully presented, expertly prepared sushi dishes. You will have the opportunity to refine your knife skills, enhance your knowledge of Japanese cuisine, and develop innovative creations that align with our fusion concept.

Key Responsibilities
  • Prepare and execute all sushi and sashimi dishes, ensuring consistency, quality, and precision.
  • Work closely with the Head Sushi Chef to develop innovative sushi creations that reflect our Mexican-Japanese concept.
  • Maintain exceptional knife skills and a deep understanding of sushi preparation techniques.
  • Ensure proper storage and handling of high-quality fish and seafood, adhering to strict freshness standards.
  • Maintain a high level of organisation in the sushi section, ensuring mise en place is always prepared.
  • Uphold strict food hygiene and health & safety standards, ensuring full compliance with HACCP.
  • Work efficiently within a fast-paced, high-volume kitchen, meeting service deadlines without compromising on quality.
  • Monitor and manage stock levels, minimising waste and ensuring efficient use of ingredients.
  • Support and mentor junior sushi chefs, contributing to their development and growth.
Requirements & Skills
  • Previous experience as a Sushi Chef de Partie or strong Demi Chef de Partie in a high-quality, fast-paced kitchen.
  • A passion for sushi and Japanese cuisine, with an exceptional eye for detail and presentation.
  • Strong knife skills and an understanding of Japanese fish-cutting techniques.
  • Experience working with high-grade seafood, understanding its handling, storage, and preparation.
  • Strong organisational abilities, with the ability to work efficiently under pressure.
  • Ability to work well as part of a collaborative team while also demonstrating initiative.
  • A desire to grow and develop within an ambitious and expanding restaurant group.
