Los Mochis City is looking for a talented Pastry Demi Chef de Partie to join our world-class kitchen team. Situated on the rooftop of 100 Liverpool Street, our flagship venue offers a spectacular 14,000 sq ft dining space with a 3,000 sq ft terrace overlooking the City skyline.

As a Pastry Demi Chef de Partie, you will support our pastry team in executing imaginative, beautifully crafted desserts that reflect this distinctive fusion.

The RoleAs Pastry Demi Chef de Partie, you will work closely with the Head Pastry Chef and Pastry Chef de Partie to assist with high-quality pastry preparation and service. You will learn advanced techniques, contribute creatively to the development of our menus, and help deliver desserts that exceed guest expectations in flavour, texture, and presentation.
Key ResponsibilitiesSupport the preparation, production, and presentation of all pastry and dessert items.
Work under the guidance of senior pastry chefs to develop new and innovative dishes inspired by our Mexican-Japanese fusion concept.
Maintain mise en place to the highest standard, ensuring readiness for service at all times.
Uphold strict food safety and hygiene standards, ensuring compliance with HACCP.
Work efficiently within a fast-paced, high-volume kitchen environment.
Assist with stock rotation, ingredient use, and waste reduction.
Actively learn from senior pastry chefs and contribute to a collaborative team culture.
Experience as a Demi Chef de Partie or strong Commis Chef in a high-quality, fast-paced pastry or dessert-focused kitchen.
A passion for pastry and dessert creation, with a meticulous eye for detail and presentation.
Knowledge of classic pastry methods, with interest in modern and fusion techniques.
Experience with Japanese or Latin American flavours is advantageous but not essential.
Strong organisational skills and ability to work effectively under pressure.
A collaborative mindset with the eagerness to learn and progress within an ambitious group.
