About the Role
Louie London is launching a bold new Japanese dining experience — and we’re looking for a passionate and talented Sous Chef – Sushi to help lead the way.
You’ll play a key role in delivering high-quality sushi, sashimi, and signature rolls, supporting smooth kitchen operations and creating an unforgettable guest experience from day one.
What You Will Do
• Prepare sushi, sashimi, and specialty rolls with precision and creativity
• Ensure all food meets our high standards of freshness, hygiene, and presentation
• Work closely with the Executive Chef, Head Chef, and kitchen team to deliver smooth service
• Maintain a clean, organised, and food-safe sushi station
• Share your expertise and help train junior kitchen staff
• Contribute to a high-energy, collaborative kitchen environment
• Engage guests when appropriate, enhancing their experience with product knowledge
What We’re Looking For
• Minimum 2 years’ experience in sushi or Japanese cuisine
• Excellent knife skills and strong attention to detail
• Knowledge of fish handling, hygiene, and food safety
• Calm, focused, and professional under pressure
• Creativity and pride in every plate
• A team player with a positive, can-do mindset
