Exciting New Japanese Concept About the Role Louie London is launching a bold new Japanese dining experience — and we’re looking for a passionate and talented Sous Chef – Sushi to help lead the way. 

You’ll play a key role in delivering high-quality sushi, sashimi, and signature rolls, supporting smooth kitchen operations and creating an unforgettable guest experience from day one. 

What You Will Do

 Prepare sushi, sashimi, and specialty rolls with precision and creativity 
• Ensure all food meets our high standards of freshness, hygiene, and presentation
• Work closely with the Executive Chef, Head Chef, and kitchen team to deliver smooth service
• Maintain a clean, organised, and food-safe sushi station
• Share your expertise and help train junior kitchen staff
• Contribute to a high-energy, collaborative kitchen environment
• Engage guests when appropriate, enhancing their experience with product knowledge 

What We’re Looking For

• Minimum 2 years’ experience in sushi or Japanese cuisine
• Excellent knife skills and strong attention to detail 
• Knowledge of fish handling, hygiene, and food safety 
• Calm, focused, and professional under pressure 
• Creativity and pride in every plate 
• A team player with a positive, can-do mindset
