Position Title: Sous Chef – The Culinary Specialist
Location: Marbella, Spain

Position Overview
For this exciting new project launching in summer 2025, the Sous Chef is a key player in both the creative and operational heartbeat of the kitchen. Working closely with the Head Chef, you help bring to life a refined, consistent, and dynamic culinary experience that reflects our brand’s signature identity.
Reliable, hands-on, and solution-oriented, you thrive under pressure and lead by example. Your passion for food, respect for high standards, and ability to guide a diverse kitchen brigade make you an essential pillar in maintaining quality, consistency, and flow of service.
You actively support menu innovation, uphold food safety standards, and motivate your team through training, clear communication, and positive leadership. Whether on the pass or prepping behind the scenes, your attention to detail and commitment to excellence leave a lasting impression—on the plate and on your team.
Key Responsibilities
Support the Head Chef in overseeing all aspects of kitchen operations including prep, execution, and service
Ensure each dish meets our standards for taste, quality, consistency, and presentation
Supervise and coordinate the daily work of all kitchen staff (CDPs, Commis, Pastry, Stewards) to ensure efficiency and clear communication
Lead the kitchen during the Head Chef’s absence, ensuring a smooth and productive service
Contribute to the creation of specials, seasonal menu updates, and event-specific offerings
Oversee mise en place procedures, proper food labeling, storage, and stock rotation using FIFO standards
Maintain strict hygiene and HACCP practices, ensuring a clean, safe working environment at all times
Assist with inventory control, stock management, and ordering processes to optimize cost and reduce waste
Monitor food preparation and plating to maintain consistency and meet service timing expectations
Train, coach, and mentor junior kitchen team members, fostering skill development and a respectful kitchen culture
Participate in the onboarding and evaluation of new hires within the culinary team
Ensure equipment is properly maintained, cleaned, and any issues are reported promptly
Maintain accurate records for production sheets, temperature logs, cleaning schedules, and checklists
Foster collaboration between kitchen and front-of-house teams to ensure smooth service and guest satisfaction
Lead with passion and professionalism, promoting the brand, energy, and values through your work and team leadership
Stay current on culinary trends, plating innovations, and evolving guest expectations to continuously elevate the dining experience
Required Qualifications and Competencies
Proven experience as a Sous Chef or Senior Chef de Partie in high-end or high-volume kitchens
Strong leadership, organizational, and multitasking skills in a fast-paced environment
Deep knowledge of kitchen operations, food safety, and HACCP standards
Passion for culinary arts with a commitment to excellence in presentation and flavor
Ability to manage a team calmly and effectively under pressure
Solid understanding of stock control, prep planning, and kitchen systems
Excellent communication skills and a collaborative, respectful leadership style
Fluency in English is mandatory; Spanish or other languages are a plus
Flexibility to work varied shifts, including evenings, weekends, and holidays
