Opening in January 2026 on Upper Grosvenor Street, MA/NA is born from the Japanese philosophy that every ingredient carries an invisible power, a life-force shaped by nature and the hands that honour it.

Guided by this belief, MA/NA will offer a seamless blend of restaurant and bar, refined Japanese dishes alongside an exceptional cocktail, wine and sake list. Here, cocktails flow effortlessly into dinner, and dinner naturally returns to drinks.

The Kitchen

Led by Executive Chef Leo Tanyag (Los Mochis, JUNO, LUNA Omakase; formerly OKKU Dubai), the MA/NA kitchen celebrates the craft of Japanese cuisine, the quiet mastery of precise cuts, the patience of fermentation, and the connection between earth and ocean.

Every dish captures a moment in its purest form, revealing depth, balance, and emotion through simplicity and control.

The Role - Chef de Partie

As Chef de Partie, you will be a key part of our opening brigade — working closely with the Head Chef and the senior kitchen team to bring MA/NA’s philosophy to life.

You’ll take ownership of your section with care and precision, ensuring consistency, timing, and calm execution in every service. You’ll approach your craft with discipline and creativity, understanding that the details, the cut, the heat and the plating are what transform a dish into an experience.

This is an opportunity to work with exceptional produce, advanced techniques, and a team that values integrity, artistry and growth.

What We’re Looking For

  • Previous experience as a Chef de Partie or Demi Chef de Partie in a high-end or fine dining environment
  • Passion for Japanese flavours, techniques, and presentation
  • Strong knife skills and meticulous attention to detail
  • A calm, organised approach in a fast-paced service
  • Commitment to learning, teamwork and continuous improvement
