Overview of Role

The role of the Assistant Director of Food and Beverage is to successfully assist the Director of Food & Beverage with leading the F&B team in executing all areas of service while supporting the development and success of the management team. Effective understanding of key financial goals and markers is essential to this role while focusing heavily on daily operation of our various outlet; and supporting driving the culture of the business to create a memorable experience for guests and employees alike.

To work alongside the F&B team in creating and developing one of the most exciting, vibrant, and welcoming venues in London.

The Assistant Director of Food and Beverage is expected to:

  • Always maintain a consistently professional demeanor.
  • Represent NoMad London positively in all interactions with internal and external stakeholders.
  • Always adhere to company policies and procedures, including but not limited to Health & Safety policies, HR guidelines and compliance trainings.
  • As a Head of Department, demonstration of flexibility, visibility and strong leadership are vital.
  • Effectively manage workload and responsibilities with efficiency.
  • Foster clear and effective communication within the team, across departments and between both hotels and management.
  • Exhibit strong leadership skills to guide and inspire the team.
  • Champion our company values and foster a positive and collaborative approach across all departments. 

Main Duties & Responsibilities

The main responsibilities of the Assistant Director of Food & Beverage are summarised below, the list is not exhaustive:

  • Support your team through all their tenure at The NoMad from coaching new starters through their probation periods, appraisals, job chats and potentially promotions and ensure all necessary training is completed in a timely manner. 
  • To create management team rotas which ensure adequate coverage in all outlets 
  • Provide day to day direction and support to all the various teams reporting to the  Director of Food & Beverage.
  • Attend departmental and hotel meetings, in cooperation with the  Director of Food & Beverage, and daily handovers with the team to ensure that all relevant information is cascaded
  • Ensure that all staff Health & Safety training for the full team is completed and updated
  • Ensure uniform, and personal appearance of your team are clean, hygienic, professional and in compliance with company policies and procedures
  • To set, alongside the  Director of Food & Beverage and Executive Chef, and uphold the standards throughout the food and beverage outlets and kitchen areas which contribute to exceeding guest expectations 
  • To help create a positive, encouraging, and fun place to work for our team and each other
  • To be extremely present on the service floor, anticipating guest needs, supporting all levels of line staff in their duties, and ensuring smooth transition of information through handovers
  • To ensure that a detailed daily management log is maintained
  • To carry out regular floor walks and report/log any details as required
  • To ensure the guest experience is of an exceptional level and constantly review standards of practice to see where improvements can be made
  • To handle guest complaints in a timely and efficient manor, reporting to the Director of Food & Beverage when applicable
  • To always be aware of budgeted occupancy and support the revenue manager, reservation team and front desk to meet and exceed these targets.  
  • To create, in agreement with the Director of Food & Beverage, an upselling policy and any other possible revenue streams to increase monthly revenue.
  • To work alongside the various other departments in upholding the standards and assisting where necessary to support
  • Assisting  Director of Food & Beverage in maintaining monthly budgets for all areas of the department 
  • To be present at F&B management financial meetings in the absence of the Director of Food & Beverage
  • Any other reasonable tasks asked to be performed by the management according to the changing business needs.
