Position Summary:
The Sushi Cook supports sushi bar operations through skilled preparation, knife work, and mise en place. This role works closely under the guidance of the Sushi Chef to deliver premium-quality sushi offerings while maintaining the precision and pace that defines MIRU’s service standard.
Tasks/Responsibilities:
Prepare fish, vegetables, and other ingredients according to exact specifications.
Assist in the assembly of rolls, nigiri, and sashimi under supervision.
Maintain a clean and sanitary work station throughout service.
Rotate stock and ensure all items are properly labeled and stored.
Follow all food safety protocols and assist with daily cleaning and prep checklists.
Continuously develop knowledge of ingredients, knife skills, and techniques.
1–2 years of experience in a sushi or Japanese-style kitchen.
Strong knife skills with interest in advancing technique and presentation.
Positive attitude, willingness to learn, and ability to take direction well.
Understanding of kitchen hygiene, safety, and prep procedures.
Must be able to stand for long periods and lift up to 50 lbs.
