Join the MOI Team – Head Bartender £45,000+ per annum (Depending on experience) 

MOI is an inventive fusion of Japanese flavours with a modern, elevated twist coming the heart of Soho’s iconic Wardour street. Led by the Executive Chef Andy Cook, the kitchen embraces Japanese cuisine as a canvas, highlighting peak-season ingredients and global influences to create dishes that are both complex and inviting. 

As a Head Bartender at MOI, you’ll be responsible for: 

  • Supporting the Beverage Manager in overseeing all aspects of the bar’s daily operations, ensuring exceptional service, efficiency, and consistency 

  • Creatively leading the bar team to deliver the highest standards of service and overall excellent experience

  • Approachable, reliable, enthusiastic, and a true supportive team player across all departments including kitchen and bar staff, to ensure smooth operations 

  • An appreciation of Japanese, Asian cuisine and culture is a plus, but not essential 

  • Supervise the preparation and service of beverages, ensuring quality, accuracy, and consistency 

  • Support inventory management, including ordering supplies, stock rotation, and minimising waste 

  • Ensure the bar adheres to UK health, safety, and licensing regulations at all times 

Team Leadership 

  • Lead and inspire the bar team, fostering a culture of professionalism, collaboration, and excellence 

  • Train and mentor team members, ensuring they understand recipes, techniques, and service standards 

  • Monitor staff performance, providing regular feedback and identifying opportunities for growth 

  • Assist in scheduling and managing shifts to maintainoptimal staffing levels during peak and off-peak times 

Menu Development 

  • Collaborate with the Beverage Manager to develop creative and seasonal drink menus, including signature cocktails and non-alcoholic options 

  • Provide input on new drink offerings, experimenting with flavours, techniques, and presentation styles 

  • Stay updated on beverage trends, incorporating fresh ideas to enhance the menu 

Financial Management 

  • Support the Beverage Manager in monitoring bar revenue, costs, and profitability, implementing strategies to achieve financial targets 

  • Assist in tracking sales performance, analysing key metrics, and identifying areas for improvement 

  • Contribute to upselling initiatives and promotional campaigns to boost revenue 

Supplier and Vendor Relations 

  • Work with the Beverage Manager to maintain strong relationships with suppliers, ensuring access to premium products and competitive pricing 

  • Monitor deliveries to ensure quality and consistency of products 

Experience 

  • At least 1-2 years of experience in a bar or beverage management role within a high-end or fast-paced hospitality environment 

  • Strong understanding of bar operations, mixology, and beverage service
