Join the MAD Team – Head Baker– £55,000 - £60,000 per annum (Depending on experience) 

As the Head Baker for MAD Restaurants & L’ETO Caffes you’ll be responsible for: 

  • Preparing and producing a variety of hand-made breads, including artisan and specialty loaves for both our L’ETO Caffes and MAD Restaurants group which is opening 3 high end restaurants this year.

Desired Skills, Experience & Responsibilities   
 

  • A minimum of 3 years' experience in baking.  
  • Minimum 1 year as head baker 
  • Prepare Sourdough breads from our various ranges and other baked products - this will include mixing, scaling, and shaping before baking. 
  • Ability to produce Sourdough bread using manual and/or industrial processes. 
  • Knowledge of Sourdough dough preparation times, procedures and various baking techniques. 
  • Ability to operate electric bread ovens. 
  • Manage high volumes and monitor production consistently and professionally. 
  • Ensure all products are made to set quality standards and in line with daily orders 
  • Knowledge of health, safety, and hygiene regulations for food preparation. 
  • Maintain cleanliness of your work area including utensils and equipment  
  • Attention to Detail: Accuracy and precision in preparing and baking products.  
  • Time Management: Ability to manage time effectively and work efficiently under pressure.  
  • Team management: Strong ability to manage and work collaboratively with your team and snr management 
  • Food Safety Knowledge: Understanding and adherence to food safety regulations.
