HEAD CHEF - Your First Step Up!

This is a fantastic opportunity for a talented and ambitious chef, ready to take their first step into a Head Chef role at our new Soho location. Reporting to the General Manager and Head of Food, you'll be the driving force behind our kitchen, ensuring the smooth and efficient delivery of top-notch food that delights our guests and complements the Clays experience. You'll have the chance to lead and inspire a team whilst delivering and upholding our high standards.

DUTIES & RESPONSIBILITIES

Your role will include but may not be limited to the following responsibilities;

Operational Management:

  • Taking full ownership of the day-to-day running of the kitchen, ensuring smooth service, efficient stock management, and effective team leadership.
  • Communicating effectively and professionally with both the kitchen and front-of-house teams to ensure seamless service.
  • Overseeing the maintenance and cleanliness of the kitchen and equipment, reporting any issues promptly.
  • Working closely with the Head of Food to develop and implement menus that are both exciting and commercially viable, reflecting the Clays brand and values.
  • Being proactive in identifying opportunities for improvement in kitchen operations and service.
  • Implement Clays standard operating procedures for kitchen colleagues.
  • Ensure compliance with health, safety, and hygiene regulations.
  • Maintain kitchen equipment and utensils, ensuring they are in good working order.
  • Coordinate with suppliers to ensure timely delivery of quality ingredients. In line with Clays F&B Strategy.

Our Clayers:

  • Leading, motivating, and training the kitchen team, fostering a positive and collaborative working environment.
  • Ensure Clays performance reviews (IMPACT Chats) are being managed effectively by our policy.
  • Schedule and manage kitchen colleague shifts to ensure adequate coverage.
  • Promote Clays Behaviours and effective communication within the kitchen and with front-of-house colleagues.
  • Support colleague development through ongoing training via Clayers Academy.
  • Ensure colleague compliance with company policies and procedures.
  • Provide high-quality daily Clayer colleague meals.

Guest Experience:

  • Ensuring the consistent quality and presentation of all dishes, maintaining impeccable standards.
  • Monitor guest feedback and make adjustments in service as needed to ensure guest satisfaction.
  • Address and resolve any guest complaints or issues promptly and effectively.
  • Maintain a focus on providing exceptional culinary experiences for all guests.

Financial Management:

  • Develop and manage the kitchen budget, including labour and food costs.
  • Managing all aspects of stock control, including ordering, receiving, storage, and minimising wastage.
  • Analyse financial reports to identify areas for cost savings and efficiency improvements.
  • Negotiate with suppliers to secure the best prices for quality ingredients.
  • Ensure adherence to budgetary constraints and financial targets.
  • Implement cost control measures without compromising on quality.

Marketing and Promotion:

  • Collaborate with the marketing team to develop and promote special menus and events.
  • Assist in content creation for promotional materials, including social media.
  • Participate in marketing initiatives to increase the visibility and reputation of Clays.
  • Accountable for the execution of Clays 3 key seasons, Sunshine Months, Moonlight Months and Festive Period.
  • Act as a brand ambassador, maintaining the Clays culinary reputation.

Administrative Duties:

  • Implementing and maintaining the highest standards of food hygiene and safety, adhering to all relevant regulations.
  • Maintain accurate records of kitchen operations, including inventory logs and financial reports.
  • Ensure compliance with all legal and regulatory requirements, including Health & Safety Policies
  • Prepare and submit required reports promptly.
  • Manage kitchen documentation, including recipes, training materials, and safety procedures.
  • Oversee food safety and hygiene audits.
  • Determine local suppliers in line with our F&B Strategy.

SKILLS, DESIRED QUALIFICATIONS & ATTRIBUTES

  • Solid experience as a Sous Chef or Senior Sous Chef, with a minimum of 5 years in a high volume kitchen environment.
  • Taking initiative and demonstrating a strong desire to develop your career as a Head Chef
  • A recognised culinary qualification (e.g., NVQ Level 3 or equivalent).
  • Excellent communication and IT skills.
  • Proven ability to train and coach junior team members.
  • Food Hygiene Level 2 certification (training to Level 3 will be provided).
  • A good understanding of food safety record-keeping (training will be provided on our system).
