ROKA is a collection of contemporary Japanese Robatayaki restaurants. Roka Mykonos offers diners a seasonal, sun-soaked escape, where vibrant dishes, inventive cocktails, and live DJs set the scene for unforgettable summer days and nights. ROKA embodies the spirit of coming together and sharing a collective dining experience, (RO) symbolises the atmosphere and (KA), the heat of fire from the Robata

Main Duties

Your key responsibilities will include:

  • Lead and support the team across all sections, ensuring flexibility, teamwork, and efficient use of resources
  • Oversee and ensure the sushi section is fully set up and ready for service, maintaining exceptional efficiency, organization, and quality standards
  • Supervise and maintain mise en place levels, ensuring seamless service while upholding the highest standards of food quality, consistency, knife work, and presentation
  • Demonstrate mastery across all areas of the sushi section while supporting the development of the team and expanding coordination with other kitchen departments
  • Lead the preparation of sushi items with precision and expert attention to detail, consistently meeting and elevating ROKA’s high culinary standards
  • Ensure all sushi equipment and tools are used, maintained, and handled correctly, minimizing breakage and ensuring smooth, safe, and efficient operations
  • Oversee the correct storage and handling of perishable items, ensuring full compliance with Food Safety regulations, daily freshness checks, and ROKA’s operational procedures
