Position Overview
As the Executive Chef in Nikki Beach Koh Samui, you will be the visionary and operational leader behind the culinary offerings. This role is key to driving the brand's high culinary standards while aligning with the overall business strategy. The Executive Chef will be responsible for crafting and delivering a culinary experience that embodies the elegance, vibrancy, and seasonal freshness at the heart of Nikki Beach’s identity.
You will be a highly creative leader, guiding the culinary team and overseeing all aspects of kitchen management. This includes ensuring quality, consistency, and artistry in every dish, while actively driving operational efficiency, cost control, and profitability. You’ll stay ahead of culinary trends, embrace sustainability, and champion the use of locally sourced ingredients.
Your leadership extends beyond the kitchen, as you will collaborate with senior management, procurement, and event teams, shaping the overall gastronomic experience and ensuring a seamless integration with other departments. You will also be an ambassador for the brand, inspiring and leading the culinary team to excellence both in and out of the kitchen.
Key Responsibilities
Oversee and direct the full kitchen operation with a focus on food quality, consistency, and culinary innovation.
Design and implement a dynamic, seasonal menu and daily specials that reflect the brand’s identity and Mediterranean influences, ensuring they align with overall business goals and customer expectations.
Supervise food preparation, cooking, and presentation across all kitchen stations and service periods, ensuring premium standards are consistently met.
Maintain compliance with food safety, hygiene, and HACCP regulations while ensuring that kitchen practices meet legal and brand guidelines.
Lead, train, and develop all kitchen staff, including Sous Chefs, CDPs, Commis, and Pastry teams, fostering a high-performance culture and ensuring alignment with the brand's vision.
Oversee supplier relationships, inventory management, and quality checks for all incoming deliveries.
Ensure all kitchen areas, equipment, and storage facilities are organized, clean, and well-maintained.
Collaborate with Events, Global Corporate Executive Chef and GM to create bespoke menus for private events, activations, and VIP experiences.
Lead and participate in pre-shift briefings, operational planning, and team training sessions.
Support recruitment and onboarding of new kitchen staff to ensure cultural and operational alignment.
Conduct regular performance evaluations and ensure staff adherence to service standards and guest expectations.
Ensure effective communication and coordination between kitchen and service teams, particularly during high-pressure events and peak service periods.
Troubleshoot kitchen equipment issues and coordinate maintenance to ensure smooth operations.
Implement allergen and dietary protocols, ensuring clear communication with FOH teams and customer safety.
Oversee all service openings, daily prep, pass management, and kitchen closing procedures.
Stay abreast of global culinary trends, sustainability practices, and premium plating techniques to maintain a competitive edge in the high-end hospitality sector.
Lead by example, embodying the brand’s elegance, energy, and commitment to excellence in every aspect of the kitchen's operation.
Required Qualifications and Competencies
Proven experience as an Executive Chef or Head Chef in a high-end hospitality environment, with a strong portfolio of luxury dining concepts.
Expertise in Mediterranean cuisine, seasonal and sustainable cooking, and high-end presentation standards.
Deep understanding of kitchen operations, food safety, HACCP protocols, and procurement systems.
Strong leadership, communication, and organizational skills, with the ability to inspire and manage a diverse kitchen team.
Demonstrated ability to manage food costs, optimize inventory, and negotiate with suppliers to achieve financial targets.
Hands-on approach to both kitchen operations and team development, fostering collaboration and excellence.
Creative, trend-aware, and passionate about delivering exceptional guest experiences.
Fluency in English is mandatory, and the ability to communicate effectively with a Thai-speaking team is essential.
Flexibility to work evenings, weekends, and holidays as required by the business.
