Position: Sushi Chef
Location
: Mallorca, Spain
Contract: Full-time, Seasonal


Position Overview

As Sushi Chef, you lead the sushi section with creativity, precision, and consistency. You are responsible for the preparation and presentation of sushi dishes, maintaining the highest standards of freshness, hygiene, and visual appeal. You train, support, and supervise your team, ensuring every plate reflects the excellence of the Nikki Beach culinary experience.


Key Responsibilities

  • Prepare sushi dishes with accuracy, elegance, and speed.

  • Ensure daily delivery and use of high-quality fresh fish and seafood.

  • Maintain strict hygiene and cleanliness across the sushi section.

  • Develop and refine sushi menu items in collaboration with the Executive Chef.

  • Control portions, reduce waste, and uphold product consistency.

  • Receive and stock dry goods and cold items as needed.

  • Supervise sushi kitchen employees (scheduling and basic HR support).

  • Train team members on cutting, rolling, and plating techniques.

  • Monitor food safety, storage, and temperature standards.

  • Lead by example with a clean, efficient, organized workstation.

  • Adapt to special requests or dietary needs with flexibility.

  • Communicate with FOH and BOH to ensure smooth service flow.

  • Ensure sushi station mise en place is ready before each shift.

  • Contribute to menu planning, seasonal updates, and new dish ideas.

  • Support culinary events, new openings, and training projects as required.

    • Inventory control and stock rotation

    • Sushi kitchen operations and team supervision
