What You’ll Be Doing
·
Lead Quality Service — Support the Head
Chef & Senior Sous in running calm, efficient services across our 2 Rosette
restaurant and family dining spaces.

Inspire the Team — Mentor junior chefs,
nurture talent and help build a positive, professional kitchen culture.
·
Create & Collaborate — Bring fresh,
creative ideas to menu development, celebrating seasonality and Cornish
sourcing.
·
Maintain Standards — Uphold impeccable
food hygiene, safety and organisational standards.
·
Manage Stock & Waste — Support stock
control, deliveries and waste‑reduction practices.
·
Be a Kitchen Leader — Set the tone for
professionalism, teamwork and consistency.
What You Bring
·
Strong Sous or Junior Sous Experience —
You’ve worked in quality‑driven kitchens and understand high standards.
·
Passion for Produce — You care deeply
about local sourcing, seasonality and sustainability.
·
Leadership & Organisation — You keep
service steady, structured and calm.
·
Team Player Mentality — You lead by
example and support those around you.
·
Modern & Classic Technique Knowledge
·
Food Safety — Level 2+ preferred.
