Rooster’s Wood-Fired Kitchen is looking for a skilled Sous Chef to join our Winston-Salem team. We’re known for simple, ingredient-driven cooking with wood-fired meats, fresh seafood, seasonal vegetables, and house-made breads. Our kitchen combines the relaxed feel of upscale casual dining with the standards and attention to detail of fine dining.

We are looking for a talented Sous Chef who brings experience, confidence, and the ability to run a kitchen with clarity and consistency. This role requires someone who can make solid decisions in the moment, maintain a calm and steady presence during busy services, and set the tone for the team through strong leadership. We value individuals who promote a culture of mentorship, teamwork, and community, supporting both the growth of their cooks and the overall mission of Noble Food & Pursuits.

What We're Looking For:

  • 3+ years of experience in high-volume kitchen leadership with strong classic cooking skills, preferably in an upscale casual or fine dining open-kitchen environment.
  • Pride in maintaining a clean, organized kitchen while managing food costs, inventory, prep lists, and daily production with accuracy.
  • Ability to read business levels for each shift, conduct thorough line checks, and ensure stations are fully prepared for service.
  • Skilled in butchering meats and fish and confident supporting seasonal menu development with the Executive Chef.
  • Calm, confident decision-maker under pressure who leads by example during busy services.
  • Team-focused leader who trains new team members, mentors developing cooks, and collaborates to solve challenges.

What You’ll Do:

  • Assist with overseeing kitchen staff and ensuring smooth service operations during shifts.
  • Support and mentor line cooks, ensuring consistency in food quality and presentation while continuing to elevate team skills.
  • Manage prep work, assist with inventory control, place orders, and support the kitchen with production tasks.
  • Work hand-in-hand with other Sous Chefs and the Executive Chef to meet daily production goals and uphold high standards.
  • Promote the Noble Food & Pursuits mission, creating an environment where both staff and guests feel valued.
