At Copain, we bring together the comfort of a neighborhood café with the craft of a true boulangerie. Our team of bakers and pastry professionals take pride in hand crafted quality, from slow fermented breads to delicate tarts and refined desserts. The Copain SouthPark location is home to our bakery production and retail space, where dedication to craft, teamwork, and hospitality come together every day.

We are looking for a Overnight Pastry Cook to join our pastry team. In this role, you will work closely with the Head Pastry Chef and production team to finish and package pastries with care and consistency. You will support the transition between morning and evening teams, ensuring the pastry kitchen remains organized, efficient, and that all finished products meet Copain’s standards before being sent out.

What You’ll Do

  • Act as the final checkpoint for pastry quality, ensuring every item is finished, decorated, and packaged to Copain standards
  • Finish and execute pastry items for retail and wholesale including muffins, scones, biscuits, tarts, entremets, cupcakes, and seasonal desserts using glazing, garnishing, and decorating techniques
  • Package and label products for retail and delivery, organizing by order and route while maintaining presentation standards
  • Maintain accurate daily production counts and communicate timing, quality notes, and issues to the pastry team
  • Keep pastry racks, coolers, and packaging areas organized, clean, and efficient, including restocking and station upkeep
  • Follow proper rotation and storage practices including consolidating, labeling, and FIFO to maintain freshness and quality.

What You’ll Bring

  • Experience working in a professional pastry or dessert production environment preferred.
  • Strong attention to detail and pride in producing visually consistent, high quality desserts.
  • Skilled in finishing techniques such as glazing, garnishing, and decorating.
  • Ability to manage time and multitask while maintaining a clean and organized workspace.
  • Positive attitude, reliability, and teamwork to support a smooth daily flow between shifts.
