Copain Bakery is a boutique, boulangerie-style bakery under the Noble Food & Pursuits umbrella, rooted in the belief that bread should be honest, nourishing, and made with care. We craft naturally leavened breads and pastries by hand, with no preservatives, no shortcuts, just time, patience, and skill. From golden, crusty loaves to delicate pastries, everything we bake reflects a respect for tradition and a love of simple food.

We are seeking an Overnight Bread Baker to join our morning bread production team. This role is ideal for someone who loves the early rhythm of baking, has a passion for fermentation and dough development, and takes pride in producing high-quality breads for our retail bakeries, restaurants, and wholesale partners.

What You’ll Do

  • Work closely with the Head Artisan Baker to execute daily production with precision, consistency, and teamwork
  • Mix, develop, and manage doughs through precise fermentation schedules, including artisan breads, potato buns, hoagies, and pizza dough
  • Prepare, shape, bake, and finish products with consistency and attention to detail, supporting donuts and croissants as needed
  • Package and label potato buns and hoagies to spec, maintaining presentation standards and organizing for service or delivery
  • Manage baking times and temperatures to achieve ideal crust and crumb while maintaining production flow and quality
  • Maintain a clean, organized, and efficient workspace, following proper storage, rotation, and FIFO standards
  • Assist with recipe testing, product improvement, and additional tasks as directed by the Chefs

What We’re Looking For

  • Previous experience baking artisan breads in a professional setting.
  • Strong understanding of dough development, fermentation, and baking techniques.
  • Ability to manage a fast-paced production schedule.
  • Self-motivated and dependable, with consistent morning availability.
  • Commitment to craftsmanship, teamwork, and quality.
