Our bakery supports a growing network of Copain retail locations, Noble Food & Pursuits restaurants, and wholesale partners across the Carolinas, representing a multi million dollar production operation built on craftsmanship and consistency.

We are seeking a Head Artisan Baker to lead and evolve our bread program. This is not a production only role. This is an opportunity to take ownership of sourdough development, influence product direction, and lead a high volume, multi channel bakery operation.

What You’ll Do

  • Lead overnight bread production with full ownership of sourdough breads, naturally leavened doughs, and long fermentation processes

  • Set the standard for bread quality across the bakery by overseeing mixing, fermentation, scaling, shaping, proofing, baking, cooling, and packaging with consistency and precision
  • Partner closely with the Executive Pastry Chef to refine existing recipes, strengthen production systems, and introduce new breads and products that align with Copain’s standards and growth
  • Drive production across multiple channels including Copain retail bakeries, Noble Food & Pursuits restaurants, and wholesale accounts, ensuring each outlet receives product that meets quality and timing expectations
  • Monitor fermentation, dough performance, and bake results in real time, making informed adjustments based on conditions, product behavior, and production demands
  • Build structure and accountability within the overnight bake team by providing clear direction, hands on coaching, and daily leadership during the most critical production hours
  • Protect the integrity of artisan methods while helping scale output in a high volume environment without sacrificing craftsmanship
  • Maintain a bakery environment that reflects high standards in cleanliness, organization, food safety, equipment care, and overall operational discipline
  • Support ordering, prep planning, production flow, and overnight execution with a strong sense of urgency, ownership, and attention to detail
  • Help shape the future of Copain’s bread program by bringing ideas, curiosity, technical skill, and a deep respect for fermentation and traditional breadmaking

What We’re Looking For

  • Deep experience in sourdough production and artisan breadmaking, with a clear passion for fermentation, process, and craft

  • Proven success in a high volume production bakery or complex restaurant group with the ability to maintain quality at scale
  • Strong technical understanding of dough development, fermentation control, mixing methods, bake quality, and bread production systems
  • Confident leadership skills with the ability to train, coach, and develop a team while setting clear standards and expectations
  • Ability to work a consistent overnight schedule and lead effectively during critical production hours
  • A disciplined and detail driven approach to execution, with pride in consistency, organization, and product quality
  • Curiosity, creativity, and a genuine desire to refine processes, strengthen existing products, and contribute fresh ideas to the bread program
  • A high level of personal accountability with the maturity to take ownership of production, problem solving, and team performance
