Copain Bakery is a boutique, boulangerie style bakery under the Noble Food & Pursuits umbrella, built on the belief that bread should be honest, nourishing, and made with care. We are seeking a Bread Baker to join our morning bread production team. This is a hands on role for someone who understands fermentation, moves with urgency, and takes real pride in producing consistent, high quality bread every day. The right candidate brings strong technical fundamentals, respects process, and can be counted on to execute at a high level in an early morning production environment.

What You’ll Do

  • Work closely with the Head Artisan Baker to execute daily bread production with precision, consistency, and strong attention to detail
  • Mix, scale, shape, proof, and bake a variety of artisan breads to spec
  • Follow fermentation schedules and dough development standards with accuracy
  • Monitor ovens, crust development, crumb structure, and overall product quality throughout the bake
  • Maintain a clean, organized, and disciplined production space
  • Support recipe refinement, product consistency, and ongoing improvement across the bread program
  • Show up prepared, work with urgency, and contribute positively to the production team every shift

What We’re Looking For

  • Professional experience producing artisan breads in a high volume bakery or from scratch production environment
  • Strong understanding of fermentation, dough handling, shaping, proofing, and bake execution
  • Ability to work quickly and stay organized without sacrificing quality
  • High level of dependability and consistent availability for early morning shifts
  • A craftsman’s mindset with pride in repetition, consistency, and execution
  • Someone who values standards, accountability, and being part of a serious production team
