At Copain, we bring together the comfort of a neighborhood café with the craft of a true boulangerie. Our team takes pride in hand crafted breads, slow fermentation, and consistent execution at scale. The Copain SouthPark location is home to our bakery production and retail space, where dedication to craft, teamwork, and hospitality come together every day.

We are looking for an Overnight Artisan Baker to join our team. This is a production focused overnight role responsible for executing our bread program from mix through bake. You will be expected to work independently, manage a full bake cycle, and maintain consistency across multiple products and volumes. This role is built for someone who is confident in sourdough and enriched dough production and takes pride in organization, timing, and execution. What You’ll Do

  • Scale and mix sourdoughs and enriched doughs based on daily production needs
  • Manage fermentation timelines and dough development throughout the shift
  • Shape sourdough loaves with consistency and attention to detail
  • Shape and bake baguettes to meet volume and quality standards
  • Bake breads in a deck oven with proper loading, steaming, and timing
  • Execute croissant baking and finishing as part of overnight production
  • Organize racks and manage oven flow to maintain efficiency across the bake cycle
  • Package and prepare finished breads for retail and wholesale distribution
  • Maintain a clean, organized workspace and follow food safety and sanitation standards
  • Communicate with the bakery team on production, quality, and any issues that arise

What You’ll Bring

  • Experience working in a professional bread production or bakery environment required
  • Strong understanding of sourdough fermentation, dough handling, and baking fundamentals
  • Ability to manage time and work independently in an overnight setting
  • Comfort working in a production environment with consistent volume expectations
  • Attention to detail and pride in producing consistent, high quality breads
  • Reliable, organized, and able to maintain focus throughout an overnight shift
