Across concepts including Rooster’s Wood Fired Kitchen, The Jimmy, Noble Smoke, and Brasserie Copain, we are committed to creating thoughtful dining experiences built on quality, consistency, and care.

As we continue to grow throughout the Charlotte market and prepare for upcoming openings in Davidson, we are looking for Sous Chefs who want to be part of building great teams, executing great food, and developing their leadership within a chef driven organization.

This is not a clipboard position. This is a hands-on leadership role for someone who wants to cook, lead, and be part of a team that holds a high standard. Whether it is wood-fired cooking at Rooster’s, full-service execution at Brasserie Copain, or high-volume scratch kitchens across our group, the expectation is the same: show up ready to work, ready to learn, and ready to lead from the front.

What You'll Do

  • Lead from the line while maintaining full awareness of the kitchen
  • Execute service with consistency, urgency, and attention to detail
  • Coach and develop cooks through real-time feedback and daily repetition
  • Manage prep, production flow, and station readiness for every service
  • Support hiring, onboarding, and training efforts within the kitchen
  • Support ordering, inventory, and food cost control through Restaurant365
  • Work directly with the Executive Chef to uphold standards and drive performance
  • Maintain a clean, organized kitchen that is ready for inspection at all times
  • Help create a positive kitchen culture built on accountability, communication, and teamwork

What You'll Bring

  • 3+ years in a high-volume, scratch kitchen environment
  • Strong fundamentals including knife skills, sauces, proteins, and plating
  • Ability to stay calm, organized, and focused during busy service
  • Willingness to be coached and push your own development
  • Leadership presence built on accountability and consistency
  • A mindset that values team success over individual recognition
  • Passion for hospitality, craftsmanship, and developing others
