We are looking for an Regional Director of Culinary to lead culinary execution across our northern region, including Davidson, Winston Salem, and Blowing Rock as the region continues to grow. This role reports directly to the Chief Culinary Officer, and the Executive Chefs within the region will report directly to this position.

The Assistant Director of Culinary will oversee culinary performance across Rooster’s Wood Fired Kitchen, The Jimmy, Noble Smoke, and Brasserie Copain. This role is responsible for driving consistency, accountability, food quality, presentation, safety, and overall kitchen performance across the region. This is a hands on leadership role for someone who can lead people well, hold standards, and help build strong culinary teams across multiple concepts.

Regional Culinary Leadership

  • Oversee day to day culinary operations across the northern region
  • Lead, coach, and develop the Executive Chefs within the region
  • Drive consistency in execution while still respecting the identity of each concept
  • Partner with chefs and store leadership to strengthen culinary performance across all locations
  • Maintain high standards around food quality, presentation, recipe adherence, and kitchen execution

Team Development and Accountability

  • Build a culture of accountability, consistency, collaboration, and continuous improvement
  • Support recruiting, onboarding, and development of culinary talent across the region
  • Provide clear direction, feedback, follow up, and performance coaching to culinary leaders
  • Help develop future leaders within the organization and strengthen overall retention

Menu Execution and Quality Standards

  • Oversee menu execution across all assigned concepts to ensure consistency and strong results
  • Support implementation of new menu items, seasonal features, and culinary updates
  • Maintain consistency in recipes, portioning, prep standards, and presentation
  • Conduct regular kitchen visits, observations, and quality checks to make sure standards are being met

Food Safety and Operational Standards

  • Ensure all kitchens are operating in line with food safety, sanitation, and regulatory requirements
  • Hold teams accountable for cleanliness, organization, safety, and proper handling procedures
  • Support strong daily systems that keep kitchens prepared, disciplined, and operating at a high level

Financial and Operational Performance

  • Partner with leadership to monitor food cost, labor performance, and overall kitchen efficiency
  • Guide Executive Chefs in inventory, ordering, waste control, and product usage
  • Support vendor relationships, sourcing, and purchasing practices across the region
  • Identify opportunities to improve efficiency without sacrificing quality

Collaboration and Growth

  • Work closely with the Chief Culinary Officer on long term culinary goals, regional growth, and future expansion
  • Support growth in Blowing Rock as that market develops
  • Partner with operations and leadership teams to ensure culinary execution supports the broader goals of the business
  • Contribute to company wide initiatives tied to training, guest experience, culture, and concept development

Qualifications

  • 7+ years of progressive culinary leadership experience, ideally in multi unit or high volume operations
  • Proven success leading culinary teams while maintaining strong food quality, consistency, and cost control
  • Experience directly managing senior culinary leaders and developing high performing teams
  • Strong leadership presence with the ability to hold standards and build trust
  • Excellent knowledge of food safety, sanitation, and regulatory requirements
  • Strong organizational, communication, and problem solving skills
  • Creative, collaborative, and solutions oriented

Compensation and Benefits

  • Salary range of $115,000 to $125,000
  • Bonus eligible position based on financial performance
