We are seeking a Regional Director of Culinary to lead culinary performance across our northern region, including Davidson, Winston Salem, and Blowing Rock as the region continues to expand. This role reports directly to the Chief Culinary Officer and provides direct leadership to Executive Chefs across multiple concepts.

This position oversees culinary performance across Rooster’s Wood Fired Kitchen, The Jimmy, Noble Smoke, and Brasserie Copain. This is a hands on regional leadership role for someone who can build teams, drive standards, and scale culinary excellence across a diverse portfolio of restaurants.

What This Role Requires

This is not a sit back and oversee from a distance position. This is a hands on regional culinary leadership role for someone who is fully capable of stepping into the kitchen, leading from the front, and setting the standard through action. You will be expected to train Executive Chefs directly, build their skills, strengthen their leadership, and hold them accountable to the level of performance required across our group. That means real coaching in real time, not just check ins and direction from the sidelines.

This role requires someone who can walk into a kitchen, quickly assess the operation, identify gaps, and take control from a back of house standpoint when needed. You must be comfortable working in the kitchens, leading service, refining systems, improving execution, and helping teams raise their level through direct involvement. You will also play an active role in menu development, seasonal changes, recipe refinement, and culinary innovation across the region. This is a role for a true operator and culinary leader who is willing to get in the mix, do the work, and help build strong kitchens from the inside out.

What You’ll Do

  • Lead day to day culinary performance across multiple properties within the northern region
  • Provide direct leadership, coaching, and development to Executive Chefs
  • Train, coach, and develop Executive Chefs through direct, hands on leadership in the kitchen
  • Step into kitchens and lead from a BOH operational standpoint when performance, staffing, or execution requires it
  • Work services alongside teams when needed to assess standards, coach in real time, and drive immediate improvement
  • Establish clear expectations and hold teams accountable to standards, systems, and results
  • Drive consistency in execution while respecting the identity and integrity of each concept
  • Partner with store leadership to strengthen overall restaurant performance
  • Build and develop strong culinary teams across all locations
  • Support recruiting, onboarding, and long term development of BOH talent
  • Coach leaders through performance management, feedback, and growth planning
  • Create a culture of accountability, ownership, and continuous improvement
  • Oversee menu execution and maintain consistency across all concepts
  • Support menu development, seasonal changes, recipe refinement, and culinary initiatives
  • Ensure adherence to recipes, prep standards, portioning, and presentation
  • Conduct regular kitchen visits to assess quality, execution, and team performance
  • Identify operational gaps quickly and implement practical solutions that improve performance, consistency, and accountability
  • Maintain high standards for food safety, sanitation, and operational discipline
  • Hold teams accountable for organization, cleanliness, and proper procedures
  • Ensure all kitchens are operating in line with company and regulatory expectations
  • Partner on financial performance across the region
  • Guide chefs on food cost, labor management, inventory, and waste control
  • Support vendor relationships and purchasing practices
  • Identify opportunities to improve efficiency while protecting product quality
  • Collaborate closely with the Chief Culinary Officer on regional strategy and growth
  • Play a key role in supporting growth in Davidson, Winston Salem, and Blowing Rock as the region continues to develop
  • Contribute to company wide initiatives tied to training, systems, guest experience, and culinary development

What You’ll Bring

  • 7+ years of progressive culinary leadership experience in multi unit or high volume environments
  • Proven ability to lead Executive Chefs and develop high performing teams
  • Proven ability to train and develop Executive Chefs through hands on coaching and operational leadership
  • Strong culinary foundation with the ability to step into active kitchens and lead execution when needed
  • Experience improving underperforming kitchens through direct involvement, structure, and accountability
  • Strong operational discipline with a focus on consistency, systems, and accountability
  • Deep understanding of food cost, labor management, inventory, purchasing, and kitchen performance metrics
  • Experience working across multiple concepts or diverse restaurant styles preferred
  • Strong communication, organization, and problem solving skills
  • Comfort working across multiple properties while maintaining high standards in each
  • Leadership style rooted in presence, urgency, follow through, and real operational credibility
