Position Title: Sushi Chef

Position Overview
At Nikki Beach Baku, the Sushi Chef plays a key role in curating elevated culinary experiences that align with our global lifestyle brand. As a master of precision, flavour, and presentation, you are responsible for crafting sushi offerings that are as visually striking as they are delicious. With expertise in Japanese culinary techniques and premium seafood handling, you uphold exceptional quality standards while inspiring your team and supporting the kitchen’s overall performance. Your mission is to bring creativity, consistency, and authenticity to every plate, leaving guests with unforgettable dining memories.
Key Responsibilities
Prepare and present sushi dishes in line with Nikki Beach brand standards and plating aesthetics
Ensure top quality, freshness, and proper rotation of all seafood and sushi ingredients
Lead mise-en-place setup, sushi station maintenance, and daily cleaning routines
Maintain full compliance with food safety, hygiene, and sanitation protocols
Oversee and mentor sushi kitchen staff, fostering consistency, growth, and accountability
Support new menu development aligned with brand identity and Executive Chef approval
Manage inventory, order supplies, and track stock of all sushi-related ingredients
Execute precise knife work, filleting, portioning, and rolling techniques
Coordinate with the wider kitchen and service teams to ensure smooth operations
Uphold professional handling and maintenance of sushi tools and cutting equipment
Control waste, optimize productivity, and support food cost targets
Participate in activations, menu rollouts, and special events as required
Attend daily briefings and contribute positively to kitchen culture and performance
Required Qualifications and Competencies
Formal culinary education or training in Japanese cuisine or sushi specialization
Proven experience in sushi preparation within a premium or high-volume restaurant
Advanced skills in seafood handling, knife techniques, and sushi presentation
Strong knowledge of Japanese ingredients, garnishes, and traditional preparation methods
High attention to detail with an artistic approach to plating
Leadership abilities and experience training and supervising kitchen team members
Familiarity with food costing, inventory control, and ordering processes
Ability to stay calm and organized under pressure in a fast-paced kitchen
Excellent communication skills and collaborative mindset
Impeccable grooming and professionalism in line with Nikki Beach standards
Tech-savvy with basic knowledge of kitchen systems and documentation
Flexible availability, including weekends, holidays, and special events
Fluency in English; additional languages such as Russian and Azerbaijani are a plus
