Description

The Old Custom House enjoys a prime position on Padstow’s South Quay. It stands proud as one of the town’s historic stone buildings and buzzes with life as both a community pub and a hot spot for tourists with comfy sea view rooms.

You’ll be working in Cornwall’s foodie capital; a serene location that’s perfect for getting out on the water, exploring the estuary, and navigating the surrounding coastline.

We’re looking for a Head Chef to lead our talented kitchen team. You’ll oversee a fast-paced environment, manage passionate people, and cook with locally sourced produce to provide experiences that delight our guests. 

About you: 

  • You front the Kitchen and Back of House Team, taking pride in overseeing a quality food offering that delights our guests. 
  • Working closely with the General Manager, you champion the spirit and values of St Austell Family Group, inspiring those around you and setting a glowing example for them to follow.
  • You have a passion for creating culinary delights from quality, locally sourced ingredients.
  • A keen eye for details sees you take responsibility for all food leaving the kitchen, making sure it is up to spec, with costs kept in line with company targets.
  • Closely monitoring your team’s performance gives you the insight to give praise where it’s due, provide constructive feedback, and nurture talent.
  • You care about the environment and ensure that the handling and disposing of waste and recycling materials is done in the right way. Your team members see you as a source of knowledge. Thanks to you, they know our offering inside out and adapt to menu changes with ease. 
  • You know food health and safety regulations like the back of your hand.
  • Being commercially minded, you understand budgets and sales targets, and play your part in helping to achieve them.
  • You make sure the kitchen it is kept looking spick and span, upholding the highest levels of hygiene and cleanliness.
