We have been Denmark’s favourite bakery for over 20 years, serving delicious breads, pastries and cakes made by hand, single estate coffee, great breakfasts, premium salads, Danish open-faced sandwiches and freshly made baguettes. We opened our flagship Bakery in Piccadilly Circus in Xmas 2016 to huge acclaim and fantastic reviews, now you can join our Central Production bakery in North Acton.

Ole & Steen is on an exciting growth journey – we currently operate 12 retail stores across London and we have plans to grow in 2021! To help us continue delivering quality products to our retail bakeries and customers across London, we are on the lookout for a Head Confectioner to be part of our passionate production team at our central production unit in Acton, London.

We operate a demanding and complex production set up which, ideally, requires experience within an artisan bakery or confectionary production.

Job Overview

 

Primarily based at our central production unit in Acton, London the Head Confectioner leads the entire central pastry and confectionary production unit together with a small local leadership team (Head of UK Production and Head Baker)  to create a continuous improvement culture and optimize processes in order to deliver great and standardized quality artisan products to our entire UK market.

 

The Head Confectionary reports to the UK Head of Bakery & Production.


This position is essential in developing and implementing a strong and scalable pastry/confectionary production set up with a strong LEAN (continuous improvement) culture, excellent hygiene and safety standards, focus on training leaders and employees in production methods, optimising production flows and reducing waste.

 

Roles and Responsibilities

 

Production leadership

 

•       Lead the pastry/confectionary production team through a combination of being hands on, giving clear instructions, assessing and providing constructive feedback

•       Plan and execute the daily pastry/confectionary production – in order to ensure right volume and minimise food waste

•       Implement new products to the UK market according to the global NPI process

•       Ensure the right product standards (sensorics), at all times, according to Group standards

•       Strengthen the collaboration with the operations team, stores and central support team in order to always operate with a “customer first” approach

•       Monitor and report on KPI´s and key production results to adjust and optimise the business wherever possible

•       Administrative tasks including ordering, scheduling and managing cost control according to the set budgets


Production Optimisation

 

·       Implementation of LEAN tools and methods, execution and follow-up of LEAN and improvement initiatives critical to the business.

·       Together with the UK Head of Bakery & Production, support the UK leadership team and Group Production team to identify improvements in direct and indirect areas

·       Lead in driving a process excellence culture within the confectionary department and entire CPU

·       Effectively challenge accepted practices and status quo to deliver high quality solutions and cost efficiency

·       Ensure the continuous implementation of the strongest health, safety and quality standards in the sector

·       Ensure the highest hygiene standards are maintained in line with UK legislation and company policies

 

Talent Management & Learning

 

•       Recruitment and onboarding of new team members to ensure a strong and sustainable people pipeline to the confectionary department

•       Provide relevant training and development with appropriate feedback to the relevant teams

•       Hold regular 1:1 conversations along with other targeted development activities to team members, working in close collaboration with the UK Head of Bakery & Production


Person Specification - our ideal Head Confectioner:

Professional Skills

•       A minimum of 2 years’ experience in a confectionary/bakery production role (preferably some experience with operations management and people leadership)

•       Formally trained Pasty Chef, Confectionary or Baker

•       Passionate about and experienced in artisan cake production

•       A continuous improvement and business-oriented mind-set

•       Demonstrable ability to lead effectively and build communication channels with colleagues across the CPU and wider business

•       Ability to analyse KPIs and other relevant business information and respond accordingly

•       Experience in driving improvement through a “hands-on” understanding of the production set up and core business

 

•       English – must be able to speak and write English to a good standard

Personal Competencies

•       Excellent communication skills and stakeholder management (from unskilled production workers to senior stakeholders)

•       Structured and agile whilst remaining proactive and driven

•       Ability to create improvements and deliver an effective contribution to the group in a challenging environment

•       Self-starter: ability to operate effectively with a positive attitude

•       Analytical: ability to analyse data and observations and turn them into actions that makes a difference to the teams and business

•       Teamwork: ability to contribute with cross functional teams.

•       Business oriented and results driven

 

Practicalities

 

This is a full-time position (40 hours per week), primarily based at our central production unit in Acton, London.

 

You must adaptable to work flexible working hours, which will include evening shifts, night shifts, weekends and bank holidays as needed by the business.
