Description
• Oversee the individual outlet operations of all bars and lounges by achieving their customer service goals and ensuring high standards through each venue.
• Responsible for maintaining inventory and supplies as necessary to support operations, as well as communicating and coordinating with any and all operating departments.
• Responsible for maintaining company equipment, identifying and enforcing the maintenance of company assets and equipment through handling and storage, working to reduce loss of hotel property, and performing all other duties as determined by the Director of Beverage.
• Responsible for ensuring that all bars and lounges meet the regulatory Health Department standards for cleanliness and sanitation of work areas and equipment.
• Responsible for scheduling, training, and evaluating beverage staff.
• Create and update the wine list in coordination with chefs and the Food and Beverage Manager
• Recommend food and wine pairings
• Advise guests on wines based on their personal tastes and food choices
• Inform guests about different varieties of wines and prices
• Ensure wines are served at the right temperature and within the proper glassware
• Store open bottles properly to maintain strong taste
• Manage wine cellar and ensure it’s fully-stocked
• Train wait staff on available wines
• Negotiate purchase prices with vendors
• Organize wine tasting days or “wine of the month” events

Skills
Good communication skills
2 or more years beverage experience, preferably as a Beverage Manager in a high-volume, fast paced, luxury environment.
Must be able to obtain and maintain any licensing or active work cards required, at present or in the future, for this position at all times
Experience as a Sommelier, Wine Steward/Stewardess or similar role
Ability to create tasteful food and wine pairings
Extensive knowledge of different wines and which regions produce each type
Applicants must be 21 years of age or above.
Knowledge of local vineyards and wineries
Understanding of the winemaking process
Certification as a Sommelier or degree in hospitality is a plus
