Assistant General Manager

Lead with passion. Inspire your team. Create unforgettable experiences.

Salary: £36,000 - 38,000 base + £13000–£13,600 in Tronc (on average)

This role offers a base salary of up to £38,000.00 plus a competitive share of Tronc. 100% of Tronc is distributed directly to staff, averaging a total potential earnings of over £51,000.

Join the Team at Pasture Birmingham

At the heart of the city on 15 Colmore Row, Pasture Birmingham is where fire, meat, and music come together in bold celebration. It’s more than just a steakhouse — it’s a lively, open kitchen experience where craft meets community, and every service feels like a special occasion.

As the latest addition to the Pasture family, Birmingham carries forward the legacy of our Cardiff and Bristol restaurants — with in-house butchery, grass-fed beef from trusted local farms, and a deep commitment to quality, sustainability, and flavour. Our open-fire cooking and vibrant soundtrack create a dining atmosphere that’s as dynamic as it is welcoming.

We’re building a team of people who are as passionate about hospitality as they are about great food and memorable experiences. Whether you're on the floor, behind the bar, or at the pass — if you’ve got the energy, drive, and personality to match our fire, we want to hear from you.

Be part of something exceptional. Be part of Pasture Birmingham.

We’re looking for an Assistant General Manager with a big personality, sharp instincts, and a genuine love for hospitality to join our leadership team at Pasture. This is a high-impact role in a high-energy restaurant—where excellence, pace, and people are everything.

What We’re Looking For

We’re after someone who brings the perfect balance of fun, professionalism, and leadership to the floor. You’ll have solid experience at Assistant Manager level (or equivalent) in a busy, high-quality restaurant and feel completely at home running a fast-paced service. You’ll be a natural motivator who leads from the front, supports your team, and brings out the best in everyone around you. You’re consistent, proactive, and dependable, with a genuine passion for people, training, and growing talent. Strong communication is key, along with a solid understanding of service operations, margin control, staff planning, and stock. If you love creating 5-star guest experiences while keeping your team inspired and energised, you’ll thrive in this role.

What You’ll Be Doing

  • Supporting the General Manager and stepping up to lead in their absence

  • Leading from the front on busy services, setting the tone and pace for the team

  • Coaching, training, and developing team members with clear goals and feedback

  • Monitoring and delivering exceptional guest experiences, every table, every time

  • Taking responsibility for daily operations, from team huddles to admin and ordering

  • Supporting with recruitment, onboarding, and performance reviews

  • Managing service flow, table planning, and guest pacing with confidence

  • Contributing to margin control, labour planning, and stock management

  • Upholding high standards of cleanliness, hygiene, and compliance (HACCP & H&S)

  • Helping plan and execute in-house events and special services

  • Encouraging a culture of fun, accountability, and support throughout the team

You

You’re a confident, capable leader who genuinely loves working with people. Whether you’re hosting guests, coaching a team member, or making sharp operational calls during a busy service, you’re always calm, focused, and fully engaged. You have a proactive mindset and thrive in an environment where no two days are the same. You bring energy, presence, and positivity to the floor, while also staying sharp on the details behind the scenes. You know that great leadership is about consistency, communication, and trust, and you’re ready to help create an environment where people feel empowered to do their best work.

Benefits at Pasture:

  • Long service benefits
  • 1 day of paid volunteering per year, with a charity of your choice
  • Regular staff trips are arranged to our farm and to our suppliers
  • Employee assistance program provided by Hospitality Action
  • Enhanced Maternity & Paternity Pay
