SENIOR SOUS CHEF 

Salary: £38000 base + £9,000–£10,000 in Tronc (on average)
This role offers a base salary of £33,500, plus a competitive share of Tronc. 100% of Tronc is distributed directly to staff, averaging an additional £9,000–£10,000 per year, bringing your total potential earnings to over £48,000 annually.

What we are looking for:

A dedicated and ambitious Senior Sous Chef to join a high-performing team in a dynamic open-fire kitchen. This is an ideal opportunity for someone with strong leadership skills and a passion for cooking over fire, working with whole animals, and showcasing the very best local, seasonal produce.

You’ll be a key part of a restaurant that values creativity, integrity, and collaboration. You'll also play a central role in shaping the kitchen culture, developing junior chefs, and helping drive innovation and excellence on every plate.

 What You'll Be Doing

In this role, you’ll support the Head Chef in the daily operation of a high-energy kitchen, with a strong focus on wood-fired cooking & butchery. You’ll take a leading role in motivating and managing the team, ensuring that consistently high standards of food and service are delivered.

 You'll contribute to menu development and creative direction, bringing new ideas and techniques to the table. Day-to-day responsibilities will also include managing food orders, stock levels, kitchen systems to maintain efficiency and minimise waste and people. Throughout, you’ll uphold the highest standards of food hygiene, safety, and compliance across the kitchen.
