Salary: up to £45,000 base + £13000–£13,600 in Tronc (on average)

This role offers a base salary of up to £45,000 plus a competitive share of Tronc. 100% of Tronc is distributed directly to staff, averaging a total potential earnings of over £58,600 annually.

We’re looking for an exceptional Senior Assistant General Manager to join our leadership team at Pasture. This is a key role within a high-volume, high-energy restaurant where standards, people, and guest experience are at the heart of everything we do.

As Senior Assistant General Manager, you will be a trusted partner to the General Manager, helping to lead a large team of approximately 100 employees while ensuring the restaurant consistently delivers outstanding guest experiences and strong commercial performance. You will play a significant role in developing managers, supporting operational excellence, and maintaining a positive and high-performing culture throughout the business.

This role is ideal for an experienced hospitality leader who thrives in a fast-paced environment, enjoys developing people, and can confidently lead the business in the General Manager's absence with a calm, collaborative, and professional approach.

What You’ll Be Doing

  •  Leadership & Team Development

    • Support the General Manager in leading the restaurant and team.
    • Coach, develop and support managers and team members.
    • Lead by example and help create a positive team culture.

    Operational Excellence

    • Lead busy services and ensure smooth day-to-day operations.
    • Deliver exceptional guest experiences every day.
    • Maintain high standards of service, cleanliness and presentation.
    • Ensure the restaurant is always operating to 5* EHO standards.
    • Drive a culture focused on achieving and maintaining 5* guest reviews.
    • Take responsibility for the restaurant in the General Manager's absence.

    Coaching, Communication & Organisation

    • Build strong relationships with the team and the support office.
    • Give clear direction, feedback and support to managers and team members.
    • Keep organised and ensure tasks are completed to a high standard.
    • Stay calm, professional and solutions-focused under pressure.

    Commercial & Business Performance

    • Support labour planning and team scheduling.
    • Help control wages, stock and operating costs.
    • Monitor sales and identify opportunities to improve performance.
    • Support the achievement of sales, profit and business targets.

You

You are an experienced hospitality professional with a strong track record of leading large teams within busy, high-volume restaurants. You understand what great leadership looks like and take pride in helping others succeed.

You bring confidence, maturity, and emotional intelligence to your role. Whether you're leading a busy Saturday night service, coaching a developing manager, or supporting the General Manager with business decisions, you remain calm, approachable, and focused.

You understand that hospitality is ultimately about people, both guests and teams, and you're passionate about creating an environment where everyone can perform at their best. You lead with positivity, consistency, and accountability, and you're ready to play a pivotal role in the continued success of Pasture.
