We’re looking for an experienced General Manager to join our growing team at Pasture.

 Lead. Inspire. Grow.  

Salary: up to  £50,000 base + £13,000–£13,600 in Tronc (on average)

This role offers a base salary of up to £56000, plus a competitive share of Tronc. 100% of Tronc is distributed directly to staff, averaging a total potential earnings of over £69,600  annually.

Pasture Cardiff is our bold second chapter — a true lockdown baby that’s grown into one of the city’s most vibrant dining destinations. Nestled in the heart of Cardiff, just steps from the iconic Cardiff Castle, the restaurant is built for theatre, energy, and unforgettable nights.

Our open kitchen puts live-fire cooking at the heart of the experience, with charcoal grills and dry-ageing cabinets on full display. On weekends, our resident DJ keeps the energy high late into the evening — because at Pasture, dining is a show, not just a meal.

We proudly source our beef from pasture-raised cattle across Wales and the South West, working closely with local farmers and producers to bring the best of the region to the table. Our beautiful terrace in the city centre adds a unique alfresco edge — perfect for cocktails, people-watching, and those long summer nights.

What You’ll Do:

Lead with confidence: Inspire and develop your managers and team to be their absolute best every day.

Drive results: Keep a sharp focus on financial performance, monitoring margins, costs, and opportunities for sustainable growth.

Support your leaders: Be a rock for your managers and a coach for your team, helping them grow with regular feedback, clear goals, and strong systems.

Think creatively to grow bookings: Work closely with the door and reservations team to increase cover count through innovative approaches, strong guest relationships, and partnerships with local businesses.

Set the standard: Deliver and maintain consistent 5-star service, making sure every guest leaves wanting to return.

Champion culture: Create an energetic, respectful, and supportive environment where your team feels valued, heard, and excited to show up.

Stay sharp on operations: From compliance and health & safety to events and admin, oversee it all with confidence and attention to detail.

Lead the floor: Be hands-on and highly visible, particularly during peak services, team huddles, and shifts that need your energy and direction.


Who You Are:

You’re a seasoned General Manager (or in a similar leadership role), with at least three years’ experience running a high-volume, high-standard restaurant or hospitality venue. You lead with confidence, transparency and empathy, knowing how to bring out the best in your people and build strong, loyal teams. Financially aware and operationally sharp, you keep a close eye on performance while thinking creatively about how to increase bookings and build lasting relationships with guests and local businesses. 

You're passionate about delivering unforgettable guest experiences and consistently high service standards. Calm under pressure and naturally proactive, you tackle challenges head-on and see them as opportunities for growth for you and your team. Above all, you care deeply about creating a positive, inclusive workplace culture, one where feedback flows, people thrive, and everyone feels proud to be part of the team.
