Founded by former Michelin-starred chef Paul Rhodes in 2003, Paul Rhodes Bakery has built a strong reputation as the go-to supplier of quality handcrafted sourdoughs, cakes and pastries in the capital. Paul’s ambition when he started the bakery was simple: to provide London’s busy chefs with the best handcrafted bread, made from the finest ingredients possible and traditional techniques.

If you are a passionate, skilled Viennoiserie Supervisor who is happy to specialise in cakes and pastries, then we have a fantastic opportunity as a Viennoiserie Supervisor at our Greenwich Bakery.

About the Role

The key focus of this role is to supervise daily viennoiserie production, ensuring consistent quality, efficiency, and adherence to food safety and hygiene standards. The Viennoiserie Supervisor leads a dedicated team of bakers and assistants, manages production schedules, supports staff development, and drives continuous improvement. This hands-on role requires a strong foundation in laminated doughs, time-sensitive production processes, and attention to detail.

Key information

  • Oversee daily viennoiserie production including croissants, pain au chocolat, Danish pastries, and seasonal specials.
  • Ensure all products meet visual, taste, and texture standards consistently across batches.
  • Coordinate daily production and baking schedules in alignment with demand forecasts and delivery timelines.
  • Communicate with the goods-in team to ensure timely availability of butter, flour, fillings, and packaging.
  • Support stock rotation, track usage, and monitor for spoilage or wastage
  • Lead and motivate the viennoiserie team to maintain a positive, productive, and respectful working environment.
  • Conduct performance check-ins, probation reviews, and participate in disciplinary processes as required.
  • Organise and lead daily team huddles to communicate production goals and updates.
  • Maintain recipe consistency, portion control, and shaping techniques across all viennoiserie products.
  • Prepare for and participate in hygiene inspections and internal audits.

    • Candidates must reliably commute or plan to relocate before starting work.
