Sommelier – New Opening at Kensington Olympia London

D3 Collective have just launched our second venue at the iconic Olympia London and we’re looking for experienced, energetic Sommeliers to help bring it to life.

Located in the stunning Grade II* listed Pillar Hall, Idalia will serve guests from breakfast through to evening dining, with a menu focused on exceptional British produce. On select evenings, the space will come alive with soul and jazz, creating a vibrant and memorable guest experience.

This is a rare opportunity to join a brand-new opening, shape the service culture, and grow with a fast-expanding business.

What you’ll be doing

We are seeking a passionate and knowledgeable Sommelier to support the Head Sommelier in managing our wine program and delivering exceptional guest experiences. This role is ideal for a motivated wine professional looking to further develop their career in a high-end hospitality environment.

What we offer

  • Up to £17 per hour
  • Full-time hours (40 hours per week)
  • 28–30 days holiday (increasing with service)

What We’re Looking For

·       Proven experience as a Sommelier

·       Recognised wine qualification (WSET, CMS, or equivalent preferred)

·       Strong knowledge of global wine regions, varietals, and vintages

·       Confident upselling skills and commercial awareness

·       Excellent communication and guest engagement skills

·       Ability to work evenings, weekends, and holidays

·       Impeccable presentation and attention to detail

·       A genuine passion for hospitality and delivering elevated guest experiences

Key Responsibilities:

  • Support the Head Sommelier in overseeing the wine list and cellar management
  • Assist guests with wine recommendations and food pairings
  • Ensure consistent, high-quality wine service across all shifts
  • Assist with staff wine training and knowledge development
  • Help oversee inventory, ordering, stock rotation, and cost control
  • Maintain proper storage, handling, and service standards
  • Stay informed on wine trends, producers, and new selections
