Food & Beverage Cost Controller


Job Summary

We are seeking a detail-oriented and commercially minded Food & Beverage Cost Controller to support the financial management of our restaurant operation. The role is responsible for monitoring food and beverage costs, controlling stock, supporting cash-up procedures, and ensuring accurate financial reporting through P2P system and Microsoft Excel for our 2 Restaurants Engel & Jang, and Pillar Hall.

This position is ideal for someone looking to develop their career in hospitality finance, with strong attention to detail and a hands-on approach to cost control and internal controls.

D3 Collective is a group of companies founded by Des Gunewardena, bringing together a portfolio of distinctive restaurants, bars, and live event venues. The company partners with a range of investors, acclaimed chefs, and leading restaurateurs to create unique, experience-driven hospitality concepts. D3’s current projects include two venues at the Royal Exchange: Engel, a bar inspired by 1920s Berlin, and Jang, a refined Korean Japanese dining destination. At the Grade II-listed Pillar Hall in Kensington Olympia, the group will launch in Spring 2026, Idalia, a grand and vibrant 300-cover all-day restaurant; Pepperbird, an intimate speakeasy influenced by Olympia’s musical heritage and Pillar Hall; and Upstairs at Pillar Hall, a striking 500-capacity event space evolving into a restaurant and bar with live music at weekends.


Key Responsibilities:

Cost Control & Stock Management

  • Monitor and control food and beverage costs in line with budget and operational targets
  • Maintain accurate stock records via P2P systems 
  • Conduct and reconcile monthly stock takes
  • Investigate and report variances in food, beverage, and consumables
  • Ensure correct pricing, portion control, and recipe costings are maintained

Systems & Reporting

  • Maintain and update system data including suppliers, products, and pricing
  • Produce regular cost reports and variance analysis for management
  • Prepare stock, waste, and cost of sales reports using Excel
  • Support menu engineering and margin analysis

Cash Handling & Internal Controls

  • Oversee daily cash-up procedures for food and beverage outlets
  • Reconcile cash, card, and banking reports
  • Investigate discrepancies and follow up with operational teams
  • Support compliance with internal financial controls and audit requirements

Finance & Operational Support

  • Work closely with the F&B management team
  • Support month-end procedures related to F&B costs
  • Assist with invoice checking, purchase order matching, and GRNs
  • Ensure adherence to company policies and UK financial regulations

Skills & Experience

Essential

  • Previous experience in a hotel, restaurant, or hospitality finance role
  • Working knowledge of P2P F&B cost control systems)
  • Strong Excel skills (pivot tables, formulas, reporting)
  • Experience with cash-ups and reconciliations
  • High level of numerical accuracy and attention to detail

Desirable

  • Hospitality or finance qualification (or working towards one)
  • Understanding of UK hospitality accounting practices
  • Experience working with POS systems and stock control software

Personal Attributes

  • Highly organised with strong analytical skills
  • Proactive and able to work independently
  • Confident communicator with operational teams
  • Commercially aware and cost-focused
