About This Job
The main purpose of this role is to oversee and be responsible for all aspects of the day to day running of the Motley Bar & Restaurant in order that it maximises revenues and profit and always operates to the correct brand standard.

You will ensure the team delivers the service strategy and initiatives with the objective of meeting or exceeding guest expectations. You will also support the Restaurant General Manager in holding the team accountable for service execution and guide individual professional development.

We aim to be the least office/admin based in our approach to managing the operation, therefore we’re looking for someone that is strong in admin skills and getting this done quickly and efficiently, allowing you to be where you’re most needed with our guests and team on the floor!

Knowledge & Experience

  • Strong Operational experience as a general manager or assistant general manager within a stand-alone high-volume restaurant is preferred.
  • Has been involved in setting up a new venue with a track record of success from the onset.
  • Ability to implement new systems/processes/procedures to be trialled before rolling out to other locations.
  • Can do positive attitude, self-starter, action, and details orientated
  • Ability to manage and control costs and achieve Budget and EBITDA
  • Wants to be there when it matters & leads from the front
  • Understands the mechanics of F&B profit as well as deliver flair, fame and fun!
  • Knowledge of current F&B trends, and can turn traditional on it’s head and make it Qbic, where we do things differently.

About your responsibilities

  • Operational excellence offering fast friendly, knowledgeable service that our guests talk about making them come back again
  • Monitoring the quality of food and drinks and ensuring that they are made to the laid down specifications and developing new specifications as the business develops
  • Communicating to all departments so they are fully aware of current and forthcoming events, promotions, menu changes and policy amendments daily.
  • Responsible for recruitment, induction and training of new staff and the development of current staff so we have a team of engaged high performers
  • Top line revenue and profit is front of mind and driven in a sustainable way to ensure budgets are being exceeded.
  • Financial accountability of food and beverage departments with systems in place to ensure target GP is achieved.
  • Supporting the General manager to ensure we comply with food hygiene, fire, health & safety regulations are met.
  • Deputised in the absence of the General manager and assumes entire responsibility of the operation
