Key Responsibilities of the Commis I - Pastry:

PRODUCE THE HIGHEST FOOD QUALITY WITHIN GUIDELINES

·         Works actively, co-ordinates the production and preparation of all Pastry items within the assigned area and ensures a smooth and efficient operation

·         Always adheres to Radisson Blu standards of preparation, recipes, and presentation

·         Uses Sous Chef/ Chef de Partie’s/Demi-Chef de Partie’s as a resource to ensure seasoning, portions, and appearance of food

·         Has a good knowledge of the menu items and specials and their recipes

·         Ensures that section “mis en place” is set up on time according to functions and level of business and asks for help if needed

·         Ensures that spoilage and wastage is kept to a strict minimum  

·         Maintains the highest standard quality and portion control, prepares requisitions, checks expiry dates, identifies slow moving items and ensures that all items are properly stored

·         Follows proper safety, hygiene, and sanitation practices

·         Ensures readiness at all times

·         Refers to station’s file regarding preparation, cooking and presentation specifications of all dishes produced in the section

·         Maintains all operating equipment and report any repairs or requirements of equipment necessary

·         Consult with Sous Chef/ Chef de Partie’s/Demi-Chef de Partie’s regarding suggestions that might improve quality and competitiveness.

·         Performs any other duties asked for by Superior

 

HEALTH AND SAFETY

·         Adheres to all health, sanitation and food safety rules and regulations

·         Reports all potential and real hazards immediately

·         Fully understands the hotel’s fire, emergency, and bomb procedures

·         Works in a safe manner that does not harm or injure self or others

·         Keeps the highest standards of personal hygiene, dress, appropriate uniform, appearance, and conduct

 

MISCELLANEOUS

·         Attends meetings and training required by the Executive Chef / Executive Sous Chef

·         Accepts flexible work schedule necessary for uninterrupted service to the food production function

·         Maintains own working area, materials and company property clean, tidy and in good shape

·         Continuously seeks to endeavor the knowledge of own job function

Is well updated on, and possesses solid knowledge of hotel fire and emergency procedures

Requirements of the Commis I - Pastry:

  • Proven experience in a kitchen position, ideally within a hotel environment
  • Ability to adapt to changing service environments
  • Commitment to exceptional guest service with a passion for the hospitality industry
  • Ability to find creative solutions, offering advice and recommendations 
  • Personal integrity, with the ability to work in an environment that demands excellence
  • Strong communication and listening skills
  • Ability to work collaboratively across functions and cultures
  • An open, positive and communicative personality
  • Ability to handle multiple challenging priorities and assignments
