Description

DAILY TASKS:

  • Review and compare material invoices with purchase orders; approve matching ones for Finance.
  • Oversee daily requisitions from outlets and departments.
  • Monitor booked store transfers.
  • Conduct spot checks on outlets and storerooms, ensuring accurate inventory and documentation.
  • Create new items in the Materials Control (MC) system per department requests.
  • Record inter-store, inter-kitchen, and inter-outlet transfers to maintain stock traceability.
  • Resolve issues related to MC system operation.
  • Prepare menu costings and advise on pricing strategies.
  • Rectify discrepancies in unit measurements and maintain accurate documentation.
  • Track and book consumption for:
    ▫ Events ▫ Breakfast ▫ VIP amenities ▫ Minibar ▫ Training ▫ Tasting sessions ▫ Open food/beverage ▫ Lunch boxes

WEEKLY TASKS:

  • Verify par stocks, investigate irregularities.
  • Document spot-checks of received goods and stockroom inventories.
  • Cross-check outlet consumption against inventory and par levels.

MONTHLY TASKS:

  • Maintain updated par stocks for all bar outlets in line with sales volume.
  • Recalculate menu costs (including banquets) and flag slow-moving items.
  • Confirm inventory count date with Finance Controller.
  • Distribute inventory schedules to departments ahead of time.
  • Launch inventory count in MC system and print department-wise stock sheets.
  • Approve all monthly internal transfers.
  • Conduct physical stocktakes (signed by two persons, one independent from stores).
  • Post inventory counts in MC; investigate and resolve variances.
  • Credit duty and entertainment meals for F&B cost accuracy.
  • Prepare reconciliation reports for:
    ▫ Food cost ▫ Beverage cost ▫ Spoilage and wastage
  • Maintain Small Operating Equipment (SOE) database, including image documentation

ANNUAL TASKS:

  • Conduct full SOE inventory and review inventory control systems.

Skills Required:

  • Inventory Management
  • POS System Knowledge
  • Fluent in English
  • Microsoft Office proficiency
  • Familiarity with MC (Materials Control) – preferred
  • Previous experience in cost control or accounting – an advantage (not required)
