Kitchen team here at Radisson RED
What are we looking for?
· Carry out daily BOH Operations within the individual department
Support CDP to ensure the section is run to the specified service levels in accordance with JTG SOP’s and standards. To be mindful of all goods that are received for the kitchen as against what we ordered/ required.
· Understand and learn specials and menu changes
Understand and learn specials for their sections in implementation and menu changes according to recipes, and standards. Ensure all standards are maintained always.
· Development and Creativity
The commis is encouraged to be part of menu and special recipe development/ testing in both practical and creative aspects.
· Mise en Plus Lists
Support CDP and ensure all mise en plus lists and handover are completed correctly for the next shifts.
· HSSE & Quality Management
Ensure all workstations and section areas are cleaned down as per JTG specifications to ensure adherence all government and regulatory requirements in food safety, hygiene and equipment maintenance. Follow internal HSSE programs especially regarding product and service levels, and general cleanliness to exceed JTG and governmental guidelines.
· Ability to learn, understand and carry out instructions
The commis is required to understand the importance of all tasks with a strict attention to details when receiving instructions from all senior members of the brigade.
· Communicate and Coordinate with all other members of the brigade
Work closely and communicate effectively with other team members to promote good teamwork and efficient operations.
