OPERATIONAL EXCELLENCE
· Oversee the day-to-day running of the restaurant and bar, ensuring smooth operations across all services from breakfast to dinner and evening drinks.
· Manage rotas, payroll costs, shift planning, and team deployment to maximise productivity and ensure great work-life balance for the team.
· Take full ownership of inventory, ordering, and stock control, working closely with suppliers to maintain consistent quality and value.
· Monitor and manage departmental budgets and cost controls to ensure financial targets are met without compromising service standards.
· Ensure full compliance with health & safety, licensing, food hygiene, and company policies.

· Review guest feedback regularly and use insights to drive continuous improvement and innovation.
· Lead daily briefings and service checks, ensuring everyone is aligned and prepared for each shift.
DRIVING RESULTS
· Analyse sales data, trends, and guest feedback to optimise menu pricing, promotions, and service flow.
· Implement upselling techniques and train the team on how to maximise spend per guest without compromising the guest experience.
· Identify opportunities to increase revenue through creative activations, packages, or value-added offers that reflect the lifestyle nature of the brand.
· Monitor wage spend and ensure alignment with forecasted business levels.
· Build strong supplier relationships to ensure the best quality products at the best possible value.
