A DAY IN THE LIFE OF A JUNIOR SOUS CHEF AT THE TOWNHOUSE HOTEL

As our Junior Sous Chef, you won’t just support the kitchen, you’ll be part of the heartbeat that keeps it running. Working closely with our head chef and the team, you’ll prep, plate, and bring ideas to life in a space where creativity thrives. Every day brings something new, and you’ll have the chance to grow your skills while helping serve up bold, memorable dishes across all areas of the hotel, from vibrant breakfasts to indulgent dinners and playful event menus.

Here’s what you’ll be up to:

  • Assist the Head Chef in planning and directing food preparation and kitchen operations.
  • Supervise and coordinate the work of kitchen staff to ensure consistency, quality, and efficiency.
  • Oversee food production, portion control, and presentation to hotel brand standards.
  • Play a key role in menu development, experimenting with new flavours and seasonal ingredients to keep the offerings fresh and exciting.
  • Monitor inventory, oversee ordering, and manage stock levels, making sure the kitchen is always prepared for a flawless service. Completing and checking deliveries as they come into the kitchen and distributing within the kitchen.
  • Enforce food safety, hygiene, and sanitation standards in compliance with HACCP and hotel policies. Keep the kitchen clean, safe, and organised as well as keeping on top of the pot wash area where needed. You’ll take pride in maintaining high hygiene standards and following health and safety guidelines.
  • Completing the daily kitchen cleaning along with the weekly deep cleaning within the site and overseeing the sign off.
  • Train, mentor, and evaluate junior chefs and kitchen staff, fostering a culture of excellence.
  • Assist in managing labour costs, food costs, and kitchen budgets.
  • Step in and lead kitchen operations in the absence of the Head Chef.

WHAT WE NEED FROM YOU

To succeed in the role of Commis Chef, you will need the following qualities and skills:  

  • A genuine passion for food and a desire to build a culinary career in a creative kitchen
  • Some experience in a similar kitchen environment or professional training is ideal, but we’ll provide support and development for the right person
  • Willingness to learn and get stuck in, you’re eager to support your team and grow your skills
  • A strong eye for detail, with a commitment to consistency, cleanliness, and presentation
  • Confidence to follow instructions, ask questions, and work as part of a team
  • A flexible, reliable approach and the ability to stay calm under pressure
