OUR HOTEL
The Mercure and ibis Styles Paignton are two seafront hotels located side by side on the beautiful English Riviera. With a combined total 282 bedrooms, a modern restaurant and bar, and panoramic views across Torbay, our properties are at the heart of local discovery. A DAY IN THE LIFE OF A RESTAURANT & BAR MANAGER AT OUR HOTEL
What you’ll be doing...

  • Lead the day-to-day restaurant and bar operations across both Mercure and ibis Styles, ensuring smooth service delivery, attention to detail, and consistently high standards

  • Inspire, develop and motivate a diverse team across breakfast, lunch, dinner and bar service; ensuring service excellence, product knowledge, and a proactive approach to guest needs

  • Collaborate closely with the kitchen team and hotel leadership to deliver memorable dining experiences, while managing capacity and operational flow effectively

  • Drive revenue opportunities through upselling, promotional activity, and creative input into seasonal menus, local partnerships, and events

  • Monitor guest feedback via GRI, ReviewPro, and internal reports, taking ownership of service recovery and using feedback as a tool for continuous improvement

  • Lead and maintain compliance with food safety, health and safety, licensing, and brand standards, ensuring all SOPs and legal requirements are met

  • Manage department rota, stock control, supplier ordering, team training, and performance management, aligning with financial targets and labour budgets

  • Champion a culture of warmth, efficiency, and pride—leading from the front, especially during peak trading times and key service periods

What we need from you:

  • A minimum of 2 years' experience in food & beverage leadership within a hotel or high-volume restaurant/bar environment

  • Proven experience in managing and developing teams, ideally across multiple outlets or shifts

  • Strong understanding of food safety legislation, allergen management, and service excellence principles

  • Commercial awareness and ability to meet targets, control costs, and drive revenue growth through innovation and attention to detail

  • Hands-on, energetic and guest-focused with a can-do attitude and passion for hospitality

  • Confident in using systems such as POS, stock management platforms and Microsoft Office

  • Flexibility to work shifts including weekends and bank holidays as per business needs
