A DAY IN THE LIFE OF A RESTAURANT & BAR MANAGER AT OUR HOTEL
What you’ll be doing...
Lead the day-to-day restaurant and bar operations across both Mercure and ibis Styles, ensuring smooth service delivery, attention to detail, and consistently high standards
Inspire, develop and motivate a diverse team across breakfast, lunch, dinner and bar service; ensuring service excellence, product knowledge, and a proactive approach to guest needs
Collaborate closely with the kitchen team and hotel leadership to deliver memorable dining experiences, while managing capacity and operational flow effectively
Drive revenue opportunities through upselling, promotional activity, and creative input into seasonal menus, local partnerships, and events
Monitor guest feedback via GRI, ReviewPro, and internal reports, taking ownership of service recovery and using feedback as a tool for continuous improvement
Lead and maintain compliance with food safety, health and safety, licensing, and brand standards, ensuring all SOPs and legal requirements are met
Manage department rota, stock control, supplier ordering, team training, and performance management, aligning with financial targets and labour budgets
Champion a culture of warmth, efficiency, and pride—leading from the front, especially during peak trading times and key service periods
What we need from you:
A minimum of 2 years' experience in food & beverage leadership within a hotel or high-volume restaurant/bar environment
Proven experience in managing and developing teams, ideally across multiple outlets or shifts
Strong understanding of food safety legislation, allergen management, and service excellence principles
Commercial awareness and ability to meet targets, control costs, and drive revenue growth through innovation and attention to detail
Hands-on, energetic and guest-focused with a can-do attitude and passion for hospitality
Confident in using systems such as POS, stock management platforms and Microsoft Office
Flexibility to work shifts including weekends and bank holidays as per business needs
