Assistant Kitchen Manager

The Position

The Assistant Kitchen Manager (AKM) is an exciting role at Red Rabbit as a part of the kitchen management team that oversees the day-to-day operation of 80 - 100 employees at our 10K sq ft kitchen in Harlem. Areas of execution include kitchen cleanliness and food safety, food prep, hotline, quality control, sourcing and inventory management, menu creation, food cost analysis, nutritional compliance, kitchen organization, and hiring and training. Reporting to the Kitchen Manager, the AKM is responsible for providing technical support to the KM, while exhibiting leadership and direction to kitchen personnel. The AKM manages operations and personnel in the absence of the Kitchen Manager.

Job Requirements

- Supervise day-day operations of the kitchen teams
- Ensure accurate packout for all schools
- Ensure food quality is up to Red Rabbit standards and recipes by regularly evaluating, tasting, and testing the food
- Perform regular food safety audits and daily food safety checks
- Track key yield and inventory issues to eliminate waste achieve food cost target
- Constantly monitor SOPs for kitchen teams
- Communicate daily reports and expectations to kitchen team
- Responsible for receiving inventory and quality control
- Create schedules and monitor labor hours
- Regularly coach, train, and evaluate employees
- Ensure all new team members are onboarded and trained properly
- Assist KM in special projects such as menu creation, sourcing, and future planning

Skills & Experience

- 1+ years professional culinary experience in a fast paced role either in the service industry (i.e. restaurant management) and/or
managing high-volume kitchen production (i.e. commissary kitchen)
- 1+ years must be in a management or supervisory role of at least 5 hourly direct reports
- Demonstrated knowledge of proper food safety and sanitation practices
- Must have proficient computer skills and required to use Microsoft Excel, Word, and Google products
- Must have thorough written, communication, and analytical skills
- Must be extremely well organized and detail-oriented and have the ability to multi-task
- Must have NYC food handlers license or certificate
- BA/BS degree in culinary arts a plus
- Bilingual (English and Spanish) a plus
- Ability to lift 50 lbs on occasion
- Must be reliable, function well within a team and work calmly and efficiently in a fast moving environment.
- Must have strong problem solving skills, be comfortable interacting with all levels of the organization
- Must share our passion for improving nutrition in schools
