Sushi Chef - ROKA Canary Wharf


ROKA is a collection of contemporary Japanese Robatayaki restaurants. First launched in 2004 in Charlotte Street, our London collection has grown to include venues in Mayfair, Canary Wharf, Aldwych and in total 13 restaurants worldwide. Known for its vibrant atmosphere, high-energy open kitchens, and beautifully crafted dishes, ROKA offers a dynamic dining experience that seamlessly blends contemporary elegance with authentic Japanese flavours.


About the Role

We are looking for a talented and passionate Sushi Chef to join our team here at ROKA Canary Wharf. This is an exciting opportunity to work in a fast-paced, high-energy environment where quality and innovation take center stage. As a ROKA Sushi Chef, you'll be at the heart of our guest experience. You will create memorable moments, embody our vibrant restaurant energy, and play a crucial role in maintaining the high standards that define us at ROKA.


Main Duties

As a Sushi Chef, your key responsibilities will include:

  • Ensure the sushi section is fully set up and ready for service, maintaining efficiency and quality
  • Maintain mise en place levels to ensure seamless service, with a focus on food quality, consistency, and presentation
  • Actively work towards mastering all aspects of the sushi section and expanding your knowledge across other kitchen areas
  • Prepare sushi items with precision and attention to detail, always meeting ROKAS’s high standards
  • Use and maintain kitchen equipment to a high standard, minimizing breakage and ensuring smooth operations
  • Participate in the proper storage of perishable and food items, adhering to Food Safety practices and regulations
