Job Overview:
Take orders, prepare, and serve alcoholic and non-alcoholic beverages to guests courteously and efficiently according to restaurant specifications. Maintain stock, supplies and cleanliness of bar and equipment.
Duties And Responsibilities
· Maintain complete knowledge of and comply with all departmental policies/service procedures/standards.
· Maintain complete knowledge of correct maintenance and use of equipment. Use equipment only as intended.
· Always maintain positive guest relations.
· Resolve guest complaints, ensuring guest satisfaction.
· Monitor and maintain cleanliness, sanitation, and organization of assigned work areas.
· Maintain complete knowledge of service requirements for assigned function:
o Liquor brands, beers and non-alcoholic beverages ordered.
o Characteristics/description of wines/champagnes ordered.
o Prices for specified bar selections.
o Designated glassware, ingredients, preparation method and garnishes required.
o Scheduled hours of service.
o Special requests/arrangements.
o Order of service.
· Maintain complete knowledge of and strictly abide by state liquor regulations, particularly those prohibiting service to minors, intoxicated persons, and drunk driving.
· Maintain complete knowledge of the Point of Sale system and manual systems.
· Complete opening side duties:
o Requisition all necessary supplies.
o Transport supplies from storeroom to bar set-up area.
o Stock ice.
o Prepare garnishes.
o Stock glassware and paper supplies.
o Prepare mixes.
o Check cleanliness and condition of bar.
o Maintain all bars including surroundings, bar top, products, and tools clean & organized.
· Greet guests and take their orders, utilizing suggestive/up-selling techniques.
· Input orders into system; legibly document orders when system is down.
· Prepare all drink orders for guests according to specified recipes and drink standards.
· Serve drinks to guests in a timely manner.
· Issue, open and serve wine/champagne bottles; collect payment/tickets where specified. Handle guest credit cards responsibly.
· Anticipate and communicate replenishment needs promptly, ensuring no shortages throughout scheduled function time.
· Clearly communicate last call at designated closing time to guests and servers.
· Present guest check and process payment. Adhere to all cash handling and credit policies/procedures.
· Ensure maximum usage of all supplies to attain budgeted beverage cost and to prevent waste.
· Complete closing side duties:
o Wipes clean all surfaces of bar; clean all bar equipment and tools. Remove trash.
o Wipe down all bottles and surfaces.
o Secure all liquors, beers, wines, coolers, cabinets and storage areas.
· Complete all closing reports in the Point of Sale system. Count bank at end of shift; complete designated cashier reports and drops receipts; secure bank.
· Ability to work a varied schedule that may include early morning, evening, night, and weekend shifts.
Physical Abilities
· Ability to grasp, lift, move, or push goods on cart/truck weighing up to 100 pounds.
· Ability to move safely in uneven terrain or in confined spaces.
· Ability to see and respond dangerous to situations.
· Requires mobility. Sense of smell, taste, touch, and sound. Eye/hand coordination and manual dexterity.
· Remain in stationary position for 8 or more hours throughout work shift
· Ability to tolerate varying conditions of noise level, temperature, illumination, and air quality.
