Job Overview:
The responsibilities of the Sushi Commis Chef include preparing traditional Japanese sushi rice, chopping, slicing, and filleting various types of fish. The Sushi Commis Chef should also be able to customize orders based on customer preferences and food allergy considerations. It is essential to ensure that all ingredients used in dishes are of the highest quality. Additionally, the Sushi Commis Chef must be able to work well under pressure while maintaining restaurant standards during busy periods.
Key Responsibilities
· Check all prepared sushi and food stocks regularly, replenish them as needed, and inform senior management of any shortages.
· Assist in the smooth running of your shift by supporting the Chef on Duty in all kitchen areas and helping with sushi preparation.
· Confirm any special requirements, outstanding orders, or work tasks with the Chef on Duty specific to your station.
· Collaborate with all other kitchen sections to facilitate efficient food service in your section.
· Control food wastage by maintaining correct stock levels and rotation in dry storage and refrigeration while avoiding overproduction or misplacement.
· Ensure that all food items in your section are labeled and that established food preparation and presentation standards are consistently followed.
· Stay informed about menu changes, daily specials, function menus, and updates to standards before service begins.
· Assist other kitchen sections with food production or clearing the section.
· Request permission from the Chef on Duty for breaks and remain on duty until the next shift takes over or the Chef officially discharges you on duty.
· Report any accidents or equipment defects to the Chef on Duty immediately.
· Always wear a clean and appropriate uniform, maintaining high standards of personal hygiene and grooming.
· Ensure all work areas in the kitchen, including dry storage and refrigeration, are always kept clean and hygienic. At the end of your shift, properly hand over your section to the incoming shift where applicable.
PHYSICAL ABILITIES
· Ability to grasp, lift, move, or push goods on cart/truck weighing up to 25 pounds.
· Ability to move safely in uneven terrain or in confined spaces.
· Remain in stationary position for 8 or more hours throughout work shift
· Ability to tolerate varying conditions of noise level, temperature, illumination, and air quality.
· Requires manual dexterity to use and operate all necessary equipment.
