Job description
This is a position for one who is interested in Japanese cuisine. We will prepare classic recipes and techniques from Japan mainly popularized in the Edo period 1600-1900 with influence of surroundings of Southern California. Knife skills and understanding of fermentation and umami will be mastered here.

Prior experience in a Japanese kitchen required.
