We are looking for an exceptional Head of Wine to join our Food & Beverage team at Signet Collection. 

The Signet Collection is a family of charming, design-led boutique hotels in remarkable locations — where story, soul and style come together. From riverside beauty at The Mitre in Hampton Court, to countryside calm at The Retreat at Elcot Park and the newest addition, The Alfriston in the South Downs, we’re building a collection of stays with character.

Role Overview: 

Our Head of Wine is more than a connoisseur — they are the heartbeat of our wine culture and a driving force behind unforgettable dining experiences across the Signet Collection. This role is all about inspiring excellence: developing our Food & Beverage teams, elevating wine knowledge, and crafting moments that surprise and delight our guests.

To thrive here, we’re looking for a true wine expert — someone who lives and breathes the craft, understands the nuances of terroir and tasting, and knows how to translate that passion into powerful learning experiences. You’ll coach, mentor, and upskill our teams, helping them build confidence in pairing, storytelling, and service that turns a meal into a memory. Ideally, you would have achieved your WSET Level 3, and are already teaching wine in a premium hospitality group.

This is is a full time, onsite role which can be based at The Mitre, Hampton Court or The Retreat, Elcot Park. There will be regular travel to our sister hotels across the Group, so a method of transport is essential.

Key Responsibilities:

People Brand & Culture

  • Partner closely with L&D and Operations teams to enhance our organisational culture, supporting us on our journey to becoming an Employer of Choice.
  • Support stretch opportunities for the Food & Beverage management team, including succession planning efforts for the future, including full responsibility of WSET training.
  • Deliver an effective onboarding experience with our L&D team, with hands on experience of teaching wine to non-knowledgeable audiences from Day 1.
  • Design relevant training modules with our L&D team for our LMS, ensuring microlearning and training is reinforced wherever possible.
Puchasing
  • Wine sourcing and Supplier partnerships - ensure each site’s wine offering is distinctive, profitable, and aligned with our brand ethos — from cellar selections to everyday pours. This includes negotiating contracts, managing pricing and margins, and overseeing wine investments that enhance both guest experience and revenue.
  • Stock control and Wine lists - maintain optimal stock levels, processing orders efficiently, and ensuring our systems and price lists are accurate and up to date. Your attention to detail will support smooth service delivery and empower teams to confidently sell and serve.
Operations
  • Visibility across sitesdeliver briefings, training, support with lunch and dinner service, driving revenue through memorable guest experiences.
  • Maintain smooth operations - updating content, managing inventory, and communicating clearly with finance teams. 
Events Management
  • Create and host standout beverage events, including Wine Supper Clubs, working closely with marketing and operations to bring each experience to life.
  • Drive innovation in drinks-led activations, supporting concept development and ensuring seamless execution across the Group.
